Three great recipes. I'm allergic to coconut so in my curries I use milk or yogurt. If you're vegan or plant based lots of great plant based milks and plain yogurts you can sub for coconut milk.

I live in a place where pine nuts are about 10 times cheaper. So, I tried the first recipe with them first and then with walnuts. My thoughts: walnuts bring much, much more to this pasta. Moreover, pine nuts do not have as strong flavour as I'd prefer, anything can cover it up.

Have a Pakistani mum, she makes potato pea curry (aloo mattar) for breakfast sometimes more or less like this one, its really good. One tip is cook the onions more so they're browner before adding garlic ginger and spices
