"I was very surprised when we first went into this that no one was making salt in New York, and very few on the East Coast; but, as we've become more involved in the business, I think there are very few people who are crazy enough to start a project like this."
Meet Steven and Natalie Judelson, sea-salt fanatics and husband & wife team behind Amagansett Sea Salt Co. in Long Island, NY.
The Judelsons' love of salts came naturally: they've always preferred savory over sweet, a preference that got them addicted to tasting and collecting all-natural sea salts over 20 years ago. What they learned is that real salts, salts not heavily processed in factories, don't all taste the same. They have their own unique "terroir" - nuanced flavors that give a product a special sense of place. So, given their fascination and proximity to the ocean, they started making their own sea salt, for fun, out of their beach home in Amagansett. Over the past ten years, Steven has slowly perfected his homemade sea salt harvesting and "farming operation", to the point where in 2009, they took "a leap of faith" and decided to share their passion with others.

Great video!! Could you tell me what type of bins you use and where did you get them? Are you worried about chemicals leeching from the plastic bins? Thank you in advance and keep up the great work!!

Thank you for your note. We stopped using these bins several years ago. The bins in this video are made from high-density polyethylene. Yes, we were concerned about materials leaching from the bins and spent considerable time searching for manufacturers who used safe and certified materials and were able to provide us the appropriate third-party certifications. Afterward, we performed much testing. Many bins of this type are available, but the materials and quality vary greatly. We now use custom-built salt pans made from a polypropylene-like material.

Must be difficult to find a material that the abrasiveness and corosivity of the salt won't deteriorate and contaminate the salt.

How do you keep bugs and dust from getting into the salt as it air dries? Or how do you clean the salt before packaging?

Pollen, dust, insects, milkweed seeds, and a host of other airborne materials must be dealt with and the salt needs to be thoroughly inspected and cleaned before being packaged and sold. During our 30+ years of salt-making, we have developed a variety of methods and materials to address these issues. While challenging, time-consuming, and sometimes expensive, the benefits of open-air salt making greatly outweigh these costs.

Hello from Australia, I am wanting to do a small harvest with my kids, do you have to filter the water? Or is there an easy method I could use with my kids (aged 5 and 11) or do I just let the water settle and than syphon out the top 90% of the water in hope the sand and what has settled to the bottom?

We use a variety of filters AND settle the seawater.

Yes don't ask u know it should be done so u don't get those little yellow and dark things or other. In the salt .

Hello from a tiny island off west africa, im looking at starting a small project for a fishing village of 30 families that totally rely on salting their fish for preservation, we are looking at constructing one evaporation box, arnd 3x4 mtr lined with black plastic and taking sea water from the sea to evporate just like you. Our plan is to filter the sand sediment out but is it necassary to let the water sit on a seperate container like you do for some time before decantering or can we filter is straight into our 3x4 mtr area and let it evoprate directly? We appreciate any help!

Thanks for your comment. First, our techniques have changed from those shown in the video, but the process shown certainly works. Next, be careful about black plastic! Some plastics are colored black with non-food safe materials. As to your specific question, we allow the seawater to sit so extremely fine materials that are suspended in the water settles and can be removed. This helps to make better salt.

Thanks for watching Liza’s wonderful video! There’s no instruction book for how to start making sea salt on a commercial level. Our formula was to start with a good, clean source of seawater (thoroughly laboratory test the water to make sure it is safe!), followed by time and patience, lots of hard work, and the stomach to learn from the mistakes (there will be lots along the way). We quickly discovered this is a full-time job and not a side hustle.

Plastic water buckets from the ocean, plastic barrels for transit and plastic drying bins covered with plastic bubble wrap? Maybe you are just trying to make the microplastics in the seawater feel they are in a safe space?
