🟢材料:
雞腿肉/雞胸肉 350克
青瓜 1/2條
蒜頭、紅辣椒、芫荽 適量
🟢調味料:
鹽 1/4茶匙
生抽 1/2湯匙
醋 1湯匙
糖 1茶匙
芝麻油 適量
炒芝麻 適量
花椒油/麻辣紅油 適量
🟢做法:
1️⃣青瓜切絲,浸泡冰水 1 分鐘,撈起瀝乾。
2️⃣將雞肉放入煮鍋中,加蔥、薑、1 湯匙紹興酒和足夠的水,水面要覆蓋雞肉。等水滾後轉小火,煮 5 分鐘。煮好後關火,焗 8 分鐘,如果是雞胸肉則需焗 10 分鐘。
3️⃣將煮熟的雞肉浸泡在冰水中 3 分鐘左右,撕碎或用叉子撥開。
4️⃣加入鹽、生抽、醋、糖、蒜蓉、辣椒絲和花椒油或麻辣紅油(可選),拌勻。
5️⃣加入適量的芝麻油和炒過的芝麻,加入芫荽/香菜和青瓜絲拌勻即可享用。
🟢Ingredients:
Chicken leg/chicken breast - 350g
Cucumber - 1/2
Garlic, red chili pepper, coriander - as needed
🟢Seasoning:
Salt - 1/4 teaspoon
Light soy sauce - 1/2 tablespoon
Vinegar - 1 tablespoon
Sugar - 1 teaspoon
Sesame oil - as needed
Fried sesame seeds - as needed
Sichuan peppercorn oil/Sichuan chili oil - as needed
🟢Cooking Directions:
1️⃣ Cut the cucumber into thin strips and soak them in ice water for 1 minute. Drain and set aside.
2️⃣ Put the chicken in a pot and add spring onions, ginger, 1 tablespoon Shaoxing wine, and enough water to cover the chicken. Bring to a boil and then simmer over low heat for 5 minutes. Turn off the heat and let it sit for 8 minutes in the pot. If using chicken breast, sit for 10 minutes.
3️⃣ Soak the cooked chicken in ice water for about 3 minutes, then shred it or pull it apart with a fork.
4️⃣ Add salt, soy sauce, vinegar, sugar, minced garlic, chili pepper, and Sichuan chili oil or Sichuan peppercorn oil(if using), and mix well.
5️⃣ Add some sesame oil and fried sesame seeds, mix in the coriander and cucumber strips, and serve.
