Just made it and loved it. How simple. I used kale and escarole and added cannelloni beans , blended Fontina with Manchego, and added a dash of Vegeta for added oomph. I wasn't ready for how well the bread absorbed the broth making this much thicker. Wonderful!

omg I did not know that you can make a soup from 🥬 lettuce, I ❤️💝Italian home cooking, delicious, I ❤️ the soup’s dishes, beautiful - love everything 💝💝💝 I will try to make this soup next time but I am very bad cook & can hardly compete for any good meal made by me. Does Lidia have any restaurants with these recipes and a delivery service because I can't tell you how much I wish I had a delicious meal like this for dinner. I love leeks and cheese. And lettuce soup I used to make it every spring but since have been quite ill so my home cooking time is down to making one dinner a week if I am lucky.

I live in the state with the highest grocery prices in the nation and they are going up everywhere and have gotten far worse here. That leek for this soup would cost me $9.99 and that would be the starting price! I don't buy $10 leeks as I am disabled but just letting people know.:-)

🍲+🍞+🧀=Mmm-MMM, This look perfectly delicious to have on a cold winter's day!!! But I have a question: do you normally supposed to discard bay leaves, or are they actually edible? They seem to get lost once you put them in the greens.

I have never known anyone to eat bay leaves, particularly the dried ones, which release flavor but don't soften to the point of being able to break down in the stomach. They run the risk of perforating the colon. My mom used bay leaves quite often and would always remove it from the food before serving.

Yes, usually the bay leaves are removed from the cooked recipe- they are too tough to eat, but impart a lot of flavor in cooking with them.
