for salty soy milk, you can consider that as a "soup", as most of the time it will ad some more ingredients such as you-tiao(majority), tsai-poh, dried baby shimps or some with chopped green onions, or bonito flakes, or even the sea grass that you had. "If" you'd like to try it again, you can try to drop some chili oil and vinegars. although the vinegar will make the soy bean milk to harden a bit like japanese steam egg, but the sourness and the flavor brought by other ingredient will make that even better.

The place where you had the oyster congee(porridge) and the red pork you ate is called 紅糟肉 not 叉燒(Char-siu) 紅糟肉 is made by marinating the pork in a red yeast rice paste which gives it a red color coating outside, then the pork is deep fried. And I believe the red yeast rice is the waste product from making a rice wine but I'm not 100% sure.

You didn't get any Xiao Long Bao, bao/bun related things. .. :) but yeah that tells you the large varieties of breakfast available in Taiwan, there are also western style breakfast such as sandwich/coffee etc

菜脯 actually is Raddish Pickle. Just like other counties, Chinese also use vegetable to make pickles or dried food for let them saving longer time.

I want to say one thing about Allan saying: "I think this restaurant has a Japanese influence. So, maybe that's something a bit extra that you wouldn't normally get in most TW restaurants". I would assume Allan is well aware of the influence of Japanese culture/food in Taiwanese history. Trace back to the Japanese occupation era. That means a lot of the old traditional food back to maybe a century ago can be Japanese influenced. Which means the seaweed can be not abnormal to "Taiwanese" traditional food at all. And it is quite common to have seaweed in pork floss. and so sometimes they put the seaweed pork floss into salty soy milk. The Japanese food influence is part of Taiwan's food history and tradition. For example, you can also find the history in the yellow pickle radish and pickle ginger in daily Taiwanese bento. And of course there are a lot more traditional Taiwanese food that has an old old relation with Japanese food. One of the most stand out influence to the traditionally tradition Taiwanese food is the most common "Bento 便當", which is straight from Japanese term for a lunch box. A rice lunch box is not called a 便當bento in Chinese Chinese. To call it a 便當 Bento is an example of how one of the most traditional and popular Taiwanese meal is heavily Japanese influenced.

I think you should try some traditional Taiwanese rice ball. It is without the seaweed sheet. Very simple but delicious. My son loves it more than the 7-11 rice ball. Living in Taiwan is very lucky, could eat any meal at any time. Thanks for sharing.
