Thanks for making this one. I really love to eat dan bing, but I was severely spoiled in Tainan. The dan bings in Tainan we're so amazing that I just haven't been able to enjoy them here in Taichung since then. A few of the ones you showed look really delicious. I am definitely going to be doing my own rating on the shops that you showed, except for Feng Chia. It is an absolute nightmare to drive my car there. BTW, I really loved that you post the places so that we can get there easily. Please keep doing that for all your future videos.

Hear about 一心、明倫 only. They all look good. 明倫offered the very traditional 蛋餅 that I first knew about as a youngster. Love lots of green onions! The rest is all newly created in the last 1-2 decades, I guess. Excellent video 🎉!

陳記酥皮蛋餅，也是台灣傳統蛋餅之一，比較屬於北部蛋餅，我有記憶以來，北部都說手桿蛋餅，都說吃手桿酥皮蛋餅，才是正宗傳統口味 第一間粉漿蛋餅，屬於南部蛋餅

第一個蛋餅應該是復古的粉漿蛋餅。在蛋餅開始出現的1970年代，當時還沒有食品工廠開始大量供應蛋餅皮。一般早餐店沒有太多時間自己弄麵糰來做蛋餅皮，就會用比較簡單的粉漿蛋餅。只要改變配方(地瓜粉的比例)，就能將蛋餅皮做出各種不一樣的口感。

現在傳統蛋餅就剩兩種，一種是粉漿蛋餅一種是手工餅皮蛋餅，至於有人說米漿做的蛋餅我還從來沒吃過，粉漿蛋餅是目前吃過最嫩的，手工餅皮是很有q彈有嚼勁，不過這兩種作法台灣真的太少人在做
