So more information about the aji de gallina since I make it. The sauce contains pecans (for an earthy sweetness), red onion, garlic, some chicken broth, a dash of cumin, aji amarillo (without the spicy seeds, just for flavor), parmesan, evaporated milk, and SALT haha. People that know how it make it, know how to make it. Its all about nailing the proportions. (Also gallina is pronounced ga-yee-na). I hope the helps!:)

Chicha morada is Made by boiling the purple corn with pineapple peals and a delicious fruit called membrillo, it Also has cinamon & cloves, there are some places where they prepare it really good, it's My favorite refreshener, Also try an awesome icecream of Lúcuma another Inca Legacy fruit , there's Lúcuma only in Perú. Try also palta or avocado rellena.

Wonderful dishes. Just a Correction, Lomo Saltado is not a Fusion with the chinese cuisine. Is a traditional Limeño plate from Century XIX, its similar to other plates like "Chorrillana" and "Lomito de vaca", indeed Lomo saltado are a derivated of them.

En la selva esta bien ese precio un pisco te cuesta 20 S/. 15 o sea, $ 4 a $ 5 y uno de buen pisco a $8 debe ser lo justo para un pico de doble Medalla de Oro.
