Meringue Wafer
6 eggwhites
1 cup caster sugar
1/2 tsp cream of tartar
3/4 cup chopped cashew nuts
2 tbsp almond flour
2 tbsp cornflour
Lemond Curd
4 egg yolk
2 tbsp lemon juice
1/2 cup white sugar +2 tbsp sugar (optional)
1 tbsp cornflour
1 tsp vanilla
20 grams cold butter
1/2 tsp lemon extract optional
Whipping cream
3/4 cup thickened cream
1/2 cup icing sugar
1 tbsp cream cheese
1 tsp lemon extract
French Buttercream
5 egg yolk
5 tbsp sugar
2 tbsp + 1/2 tbsp water
150 grams salted butter
40 grams unsalted butter
2 tsp lemon extract
Baking Time: @130C for 2 hrs.
Turn off the oven for 30 mins to dry your meringue
Bake again @110C for another 30 mins
Turn off & rest inside the oven for 1 hr then you can remove it
Note: Temperature may vary depending on your oven.....
