I never usually like peoples what I eat in a week videos because they are either very staged, unrealistic to make and so forth. But you have the best ones. Everything you make and eat is very simple (which is how most people eat) and easy. I always get new ideas like that hummus and mushroom toast WOW.

I like your what I eat in a week videos because I can tell that it's genuine and these meals are part of a busy life. Occasionally you'll skip a meal and end up having a snack late at night and that's just the way it is! I work full time now and there's just not always time for everything, so seeing that reflected on KZbin AND getting great recipe input is awesome. I adapted your mushroom hummus toast with spicy hummus and a bagel this morning and it's BOMB!

Lindsey, I cannot express how much I admire you! You inspire me to make healthier choices- both for my mental health and physical health. It is nice to see you still eat "comfort foods" and not follow an insanely strict or "raw" vegan diet. You've inspired me to eat more plant-based (I'm currently vegetarian but reallllly would like to cut out dairy), but also you've inspired me to take care of my mental health (I have my first therapist appointment on Friday). I can't believe anyone would be negative about your "What I Eat in a Week" videos. When you posted the last one I used those recipes for about 2-3 weeks and managed to go almost entirely plant-based for that long! Because I was so obsessed with the meals! Isn't that enough for people? Even if you encouraged every person to only make 1 plant-based meal a week ... imagine the eventual impact ... KEEP DOING YOU GIRLY!

Thanks for sharing these ideas! I'm not vegan but love integrating plant-based foods into my diet as much as possible, and videos like this really help. As for the negative comments on your previous video, I didn't see them but remember thinking after watching that I wish I'd bought some bread this morning when I did my shopping lol because everything you made looked soooo good. Got me over here craving avocado toast, mushroom toast, jam toast... lol. I'm struggling with food at the moment and I find it so annoying when people feel like they can comment on what people should/should not eat.

that farmers market soup sounds so good, I think I will try to recreate one like it this week! soups are my fave to make. If you are interested in making soup from scratch you should google “vegan garam masala carrot soup” from a beautiful plate - it is seriously THE BEST and so easy!!

sooo this is from the viewpoint of a nutritional scientist... I absolutely love your videos because you eat such a great mixture and it is very similar to my diet and i find very much inspiration in it. Also to the critique you got: Bread and oil is NOT a bad thing!!! Just because the skinny/fitness culture sees the devil in so many foods it doesnt mean that this is true! Those people are sadly just seeing things like calories in food. A good amount of healthy fats (i.e. in olive oil, avocados) is very important. Our body especially our hormonal system needs those fats! Absolutely love those videos and looking forward to the next one! Love from Germany

lucy clark r u allowed to have a rice cooker or instant pot? i would make pasta all the time in the rice cooker and it gets hot enough to sauté onions and stuff..i dont have an instant pot but ive heard u can pretty much make anything in them

I just found your channel on youtube a few days ago and fell in love with your videos but please - 5:36 chia seeds are not high in protein, you would have to eat 100 g of them to get 17 g of protein, so the little sprinkle of seeds that you add into your oatmeal aint much protein. :)
