Hi Ling, thank you for sharing your recipe . Can I use a rolling pin instead of a cleaver to flatten the dough. Not got a cleaver yet! Looking to get one. Btw I’m Malaysian in UK too:)

Wheat starch and potato starch is used for har gow for this recipe, because of its texture, for any other dim sum dumplings other kind of flour may be used such as potstickers or siu long bao which uses plain flour, these are also featured in this channel.

Wheat starch and potato starch is normally used for Har Gao😉 Any other flour will be for different types of dumplings.
