I discovered something accidently the other day that you might find useful. I prepared a simple green curry soup just using what was on hand, including a pkt of frozen winter vegetables. The veg (broccoli, cauliflower, green beans and carrots) were too chunky for my soup so I roughly chopped them before adding them. The soup was delicious and I was on my second bowl when I started noticing the soup contained very tender chunks of white fish, very much like Orange Roughie. Then I realized I was actually eating lumps of cauliflower stem, separated from their florets by my chopping and made super soft and tender by sitting in the hot soup for several hours. I swear this was easily the best and easiest vegan fish sub I have ever tasted. The trick is to save the florets for something else and only use the stems in bite sized bits and to cook them much longer than normal. Do try it. You might be able to take it to the next level (if you haven't already done so.)

I can confirm that this mushroom looks, smells, and tastes like meat when it's fried. I was a demo chef at a fancy grocery store, and we got some lion's mane mushrooms in, so I fried one to test it. Now, I eat meat almost every day, and I thought it tasted like pork loin. So I took it around to the people I worked with and asked them to guess what it was. Every single person thought it was either chicken or pork. No one could believe it was a mushroom. Did you know that you can buy kits online to cultivate them in your own home? I need to get on that.

There are packs you can buy where you just spray it with water and they start growing. Just look up mushroom kits.

I first heard of Lion's Main Mushroom in November from watching your video making vegan crab from it. My husband makes vegan crab imperial from it once or twice a month. The vegan bacon/pork version looks good too. Please keep the Lion's Mane ideas coming.

Older specimens get even shaggier! They harvest cultivated mushrooms when they are pretty young so they are easier to handle and presumably for taste (can anyone confirm?).

Shanggie's does make a vegan pork flavoring. Be sure to check ingredients as they also have a meat-based version. I checked with the company to verify the vegan version. Hope this helps!

I mean, the result you got is just insane - so meaty! Definitely worth the work and time! It must have been super satisfying alone but would probably work great for a full English brekkie or in a sandwich. I which I could try making something similar but Lions Mane mushrooms are so hard to get and super expensive her so I'll probably not go for it very soon :D . @@SauceStacheI don't know if you will ever see (& respond) to this text but I have been looking for the vegan pork loin recipe (& vegan corned beef) but Never Ever have thought of using Lion's Mane Mushroom. Between your & Monica's comments about brisket, corned beef, & pork tenderloin, maybe this is the direction I have been looking in trying to create really really good vegan substitutes for these items. I would LOVE to see you try Lion's Mane with the Pork loin, corned beef, pastrami, etc al. I am going to try these myself (albeit all I have, at this point, are dehydrated Lion'!s Mane mushrooms). So at this point I will have to work with what I have. BTW, that vegan pork belly/ bacon 🥓looked beyond awesome..!😋

I've been wanting to try this mushroom for ages (as food, not those annoying supplements advertised at dubious places), this intrigues me even more so. I probably will have to try to order one online in the end, or worst case even a grow kit (my tiny flat is not too conductive to mushroom growing, I would have loved to grow oyster mushrooms, enoki, portabello, and so on [as that would make life a lot cheaper]). Fun fact, in my language the mushroom is called (when translated) hedgehog-spikes mushroom.

I've heard headgog mushroom and also people call them monkey head mushrooms! I've grown them, but for this video I wanted a big one and I've tried to grow them large multiple times and I always fail!

This mushroom absolutely blew my mind. Breaded and fried to make chicken nuggets and they were incredible. Juicy, tender, and even stringy like chicken.

So, a fellow Swede or at least Scandinavian 😁 (I'm not Goran. I'm his wife. My broken phone took my passwords). But Scandinavia is full of mushrooms! Okay, not all year round, but still. You can freeze them and dry them and chantarelle are really much better than oyster mushrooms. (I'm actually eating oyster mushrooms right now.) Those mushroom growing kits aren't very cheap at all. On the other hand, I've lived abroad for 20 years so I don't know the price on mushrooms in Sweden.

Two experiments. Putting tofu in a pressure pot (you get from a hardware store). For pressing out water and marinating. Then do the same thing with a vacuum chamber. You can actually buy vacuum marinators.

This one looks amazing. I'm not really into the bacon recipes usually, although I wouldn't mind having a nice faux BLT some time, but this one just looked epically tasty, and not that hard to make. Problem is, I've got no idea where to find a big Lion's Mane like that!

I watched your “corned beef” pickling for a Reuben and it looks like the lions mane so totally would work for that, and then sliced and heated? Replace the bacon flavors with pickling spices salt and some beet powder?
