Thank you for this excellent video on fats and lipids. A question about coconut - You mentioned that coconut oil is unsaturated fat. What about coconut meat? Is that saturated or unsaturated?

The McGraw Hill Intro to Nutrition textbook lists coconut oil as 92% saturated. It is not a good example of an unsaturated fatty acid. It has a higher saturated fatty acid % than butter.

Blurg :/ everything was great until about 11:00. The description of atherosclerosis is far from accurate. Cholesterol is essential for life. The implication of cholesterol as the primary cause of atherosclerosis is misguided. I would recommend to anyone watching this video to also view Peter Attia's "straight dope on cholesterol"

I copy/pasted this from the American Heart Association's website on their page about artherosclerosis... Atherosclerosis is a big word for a big problem: fatty deposits that can clog arteries. These buildups are called plaque. They’re made of cholesterol, fatty substances, cellular waste products, calcium and fibrin (a clotting material in the blood). Exactly how atherosclerosis begins or what causes it isn't known, but some theories have been proposed. Many scientists believe plaque begins when an artery’s inner lining (called the endothelium) becomes damaged.
