I always homemade elderberry syrup. Here’s my tips… I put 1 cup of dried elderberries, one stick of cinnamon, few whole cloves and one finger of fresh ginger chopped and 4 cups of water in crockpot low for 6 hours then cool down and drain out then add 1 cup of honey. I drink one shot everyday. If sick, 3 shots a day.

Thanks to you and your mama, I added baked squash and your spices to my spaghetti sauce and came in second in the contest! And yes, fermented honey garlic is a mainstay in my cupboard!!

I have yet to find anyone who makes meatloaf the only way I’ve ever had it. Never knew everyone else baked it in a loaf pan growing up. I simmer mine in a pot on the stove top. I form a ball, brown in butter and onions, add water, salt & pepper. Simmer for about an hour and a half. When done, remove meatloaf, thicken liquid to make a gravy and serve with potatoes. Stays nice and moist. I find in the pan is greasy, and would never eat with sauce. Everyone seems to like a tomato based sauce with it.

I agree that the act of trying to help someone feel better is a powerful remedy even if what you give them (tea, hot bath, etc.) doesn’t have medicinal benefits. Like I always say, the placebo effect is still an effect, and the demonstration of love and effort to make someone feel better is the most powerful part of the actual remedy/care plan/whatever you want to call it. There’s a reason we remember being sick as children and remember what our loved ones did for us but can’t even vaguely remember what actual medication or formal treatment we had. We crave the act of our loved ones, not the medicine itself. 😊

I was terribly ill from a blocked gallbladder duct for 20yrs. Doctors kept saying I was just "too hyper" and had an irritable bowel. I craved garlic and ate it a lot. Finally found a doctor who took me seriously and had surgery. My gallbladder was gangrenous. I believe that garlic saved me.

I don’t know if this information is important or not, but when I was a child 55 years ago my brothers and I ate elderberries by the handfuls with no problems. Our lane was lined with the bushes and they were a big treat to us. So delicious! 😊 I just made my first batch of fermented garlic this past week.

So neat to see your cows and horses munching on hay with a little snow on the ground..it was near 70° here on the Central Coast of California yesterday for Thanksgiving 🦃🥧. You hate chopping onions I have found getting dehydrated onions is so great to have on hand. I also have dehydrated celery and soup vegetables. I live alone so they do not go bad. But I also use them bigger batches I use the veggies to start with making broths then add more at the end along with fresh and frozen.

I love the mayo in the meatloaf, I always throw in a tablespoon or so of worcestershire sauce, and to make my kids get more veggies I add small diced onions, carrots and celery and zucchini when I have it, stretches it further and adds moisture. Loving your channel, just found you not long ago and have watched many of your videos already.

i never put it together before..while chopping and freezing my onions and garlic this yr...it made me cough and expectorate alot of phlegm...I guess the idea of poultices in yrs past were effective because of the expectoration benefits

When you are or have been sick, onions are not something you should omit from your foods. My chicken noodle soup has whole wheat noodles, chicken broth, chicken, carrots, lots of onions, thyme, garlic powder, Moroccan seasoning blend, parsley flakes, smoked paprika, lemon juice, black pepper and only a little salt to taste. Being heavy handed with the spices is a really good thing here. Black pepper is a natural decongestant. This is a really good mix for flavor but also for your immune system. Go light on salt when you're sick, though you might sweat out salt, salt can dehydrate you, which is a problem you really don't need to add to the ones you've already got. Even if you're not sick you'll feel good after eating this soup, if nothing else, the flavors will perk you up and and make you smile. Add in thyme to black tea leaves, cinnamon and clove and steep, add a little honey and some lemon juice, this is a really good combination for sick folks. It's baffling how folks nowadays have no idea what's good for them, or how they seldom give any attention whatsoever to what is bad for them. This is the third video of yours that I've watched, and have to say, you sure do use a lot of a plastic for a homesteader. Eating organically is pretty much pointless if you're just gonna poison your foods anyways with plastics. Have grown up working farms, fields, garages, operating heavy machinery, food service, military, security, politics and everything in between, but have also worked in several medical fields, including science, and truthfully tell you that pesticide tainted foods, genetically modified foods, fluoridated and chlorinated and/or otherwise treated water, preservatives, plastics and nonstick cookware are absolutely detrimental to your health, and are the top reasons why even very young folks are suffering from gastrointestinal diseases, including everything from acid reflux to colon cancers to heart disease to diabetes and everything in between. Grew up drinking wonderful spring water, but at a very young age remember folks coming around trying to get us to spend thousands of dollars we didn't have to pipe county water to our property for "health benefits". Might've been what sparked my interest in science, but as I got older they were still trying to get everybody to tap into that water system, and having tasted it at a house in the city and having it set my stomach on fire, I knew something was absolutely wrong with it and did a sneaky thing to make a point. They gave out vials for folks to test the water from springs and wells that you could have tested for free, so I put some city water in one and turned it in, the results were "unfit for human consumption". There is more than fluoride and chlorine in city water, including feces and an assortment of chemicals that can be deadly. Politicians and rich folks have suppressed that information in the past, but nowadays you have those deniers that refuse to believe the science and those that are too ignorant to care. Using silicone instead of plastic is far, far healthier. Freezing in glass is not a problem as long as you leave room for expansion and you can place a piece of parchment on top of soups or casseroles to prevent freezer burn. Use butcher paper instead of plastic of any kind. There is documented science that will back up everything I've mentioned.

I felt like I was watching myself cooking, I make the same things! I did give up the 2 loaf pans and went to a 9x13 pan. I also use 3 pounds of pork and beef mix. I make my soup the same way but without potatoes, I'll try that next time. Speaking of potatoes, I didn't realize to can them in such big chunks, maybe that's why mine disintegrate...lol Try adding cinnamon to your juice it helps the taste and great health properties. Loved the electrolyte mix, I'm going to try it, thanks.

You're going to need more ventilation in that room with the freeze dryer. They generate a lot of heat and they don't run well when the room is warm.

It’s amazing how much heat they generate. I blow a fan on the vent holes area of the unit totally keeps it cool enough.

those elderberries, i have tried tons of ways, using a comb, but ended up in the long run, cleaned them by hand ,,also, we eat a clove of garlic everyday, its been in my honey for a year, i bet no one likes our breath lol OH well, keeps us healthy ,, ,,,,your amazing,,, ,, great video as always

I know your struggles with onions! But try this tip next time. Place how much onions you want to cut over night in the fridge. And try to cut them with out the goggles. See if that helps. Let me know if you tried it and if it worked or not. Thanks and have a great day.

Our family is mostly grown up as are our grandkids. I keep them supplied with an elderberry herb syrup, fire cider, Four Thieves and fermented garlic with toasted ground black cumin. I am supplying six other families besides my husband and I. Love that you do the same!!

I agree about how the actual effort you make in 'tending to' people helps them feel better and heal. Two of my kids are grown and one is still at home. When they've been ill, I've made them 'couch beds' (comfy blankets, pillows, etc. on a couch), put on a favorite movie for them, and have given them drinks, foods, etc. that are very nourishing and/or comfort foods. I always fuss over them when they're sick and make them the center of attention. I put off or minimize my work if I can and focus on the sick kid. I think the act of doing that is good medicine. When my son has been ill as an adult, he says his memories of me caring for him make him feel better (and a little homesick). Love goes a long way in the healing process.

I’m a new canner. Started with a water bathed applesauce. Then pressure canned leftover turkey, and just finished 8 pints of sweet potatoes. (There’s only 2 of us😊). I want to thank all you who post about preserving and canning for giving me the courage to try it. Just retired, and at 67, have a little more time. Bought an electric canner and cautiously crept into it. I DO HAVE ONE QUESTION for all you experienced canners. Do some jars seal during the canning process or all after? Thanks, all!

Mostly after, but some can seal as you remove them from the canner, as the hot jar hits the cooler air.

I as well started last year canning jams etc, this year I got a pressure canner and it’s been fun! I made some plain beans and ranch beans they tasted just like the can ones, my husband loved them. I only made 6. They are gone lol 😂so I will make more. I’m trying Turkey leftovers after thanksgiving to can up, give it try. This has really been fun and I’m glad you also enjoy it.

When I am pulling my garlic bulbs apart, I keep the smallest for honey garlic, medium to eat fresh and the largest to plant. Also, I make a "jello" with bone collagen, elderberry syrup and a good quality fruit juice. Love your inspiration!

I think that the psychological/emotional part makes for 2/3 of the recovery process. Closely followed by homemade chicken soup. 😍 Nothing feels better than being sick or under the weather, knowing there is someone taking care of you and everything else. Just letting go and heal.

To make elderberry more palatable I mix up to 1 cup elderberry juice with either a bottle of grape juice or make up a grape juice concentrate. My kids actually enjoy it. Been drinking this mixture for many yrs now during cold and flu season drinking 1 cup of the mixture daily has significantly reduced the illnesses that go around, especially those who go to public schools. My kids have been much less susceptible to all those nasty bugs...

In Denmark we have a tradition of making the elderberries into soup or drink it as either hot or cold lemonade. The soup is delicious as dessert on cold winter nights. You just thicken the lemonade with corn starch and eat it with a kind of dry cookie meant for soups or a butter oat crumble or rye bread crumble (depending on where in the country you're from). Kids love it and I would always beg my mom for some after dinner.

Freeze dryer can put put out good amount of heat. My Un heated insulated garage stays about 50 degrees in winter. Might think about insulation in that wall to cold room. I am in zone 6

No doubt you're right about the fact that having someone care for you helps with recovery. I know that when I'm sick, I only have enough energy to do the very basic re. preparing nourishing food & drinks, and really wish somebody would make me tea & soup! You made me crave my mom's meatloaf - I'll have to see if I can find her recipe now!

Hi Chelsea - love the way you spice up the meat loaf - I’ll have to try that. Glad to hear the family is starting to feel better. I’ve got my freeze dryer running solid for a week - lots of frozen veggies to freeze dry - allows me to free up space in my freezers for other items.

My mother has a variant of the honey water thing you showed at first. She is Salvadorian and shes uses everything you listed but she also adds some mint to it to open up the the sinuses when stuffy. Taste good and makes you feel wonderful! She got the recipes from her grand mother and it has been a staple for us when we are sick also. you give off the same kind and loving vibe my mother does. awwwwww. Freya's lashes are white! How cool. (and no idea why it's just not showing me this video. Stoopid algorithm). Also: I love that you use the word Supper. In the USA South, we there is breakfast, lunch, and supper. "Dinner" is used for whichever lunch/supper meal is larger or more grand. Supper is perfectly fitting, especially for the way you cook. I'm glad to see it transcends countries.

No one ever tells you that Elderberry STINKS!! My Husband wore a mask the first time I made syrup (2017...so pre covid) When clove, cinnamon, and ginger is added during the cooking process is a game changer!!! Tastes better too.

When i make my fermented garlic, I found it easier to layer your garlic then honey then repeat. No need to let it sit for so long to drip into all the crevices. I use the honey on our puzza crust and garlic bread. Adds a little sweetness, i eat a garlic clove every day.

A trick I learned in the restaurant I worked in…..large amounts of hamburger mix in your mixer…..I use my whip attachment…I also mix all dry ingredients together then sprinkle in as meat is mixing. Meat loaf is the vessel I hide powdered veggies in because hubby doesn’t like many vegetables….so dehydrated avocado, or squashes or onions and celery….he likes it to be smooth meat. Serve with caramelized onions and jalapeño ketchup and those 3 lbs of meatloaf will be eaten by him in one meal… Makes me hungry so it’s meatloaf tonight with mashed potatoes from the freezer…love prepped foods😊

I know mothering is an imp aspect of healing My mom died when I was 14 so I never had any when I was sick and with children to boot. (Nor to help just before and the week after the births) ALSO I mother a teen girl who’s own mother is quite neglectful in rly imp ways. She wasn’t sure how to take it even, at first. She rly appreciates it now tho, just the simplest thing like making her something to eat when she’s not gotten out of bed (besides giving her herbs and colloidal silver, etc). Mothering is a God-given role we should embrace - with relish!

Try making some Elder flower syrup and not the berries. It's delicious and won't give you a tummy ache. That's what Italians do, as Sambucus nigra flowers everywhere.

Catsup in meatloaf and top with bacon strips snd top with catsup and spread with back of spoon...yum Your mayo stems from the Swedish use of old bread crumbs softened with milk then added to the meatloaf. It's not fancy but more using all things in home. Nothing goes ro waste. Next time try making small well on top of loaf and add can or monemzfe cream of mushroom soup with 1/4 c water. You'll never go back

So nice to finally see someone who uses oats in their meatloaf! My mil did and so my husband likes it that way. Everyone else looks at me like I'm nuts when I tell them I put oatmeal in meatloaf, LOL If you make the meatloaf mix, then scoop in 1 cup portions on a sheet pan, it cooks so much faster and makes for great portion sizes! I make 10-15 lbs of groud beef into meatloaf at a time, cook, cool the leftovers and then vacuum seal and freeze. Then next time, I don't have to mix it up!

You're exactly right! European elderberries are a different variety that what we have in North America. Once my syrup is done, I sometimes mix it with ginger ale or 7up...

You're right dairy is not good for you when you're sick because it backs up into your ears and sinuses. And I'm sick right now and I wish I could have elderberry but anyways I'm going to have some chicken stock with some Asian dumplings that are spicy and I'm going to put some shredded carrots in there and some peppers and have some slices of cucumber on the side. Because this girl needs to get better. I got to drive 45 minutes to go to my job tomorrow and I got to work hard and then I got to drive another 45 minutes back and work some more than drive a half-hour home. And I just remembered I had some garlic infused with oil. I don't know if I'm ready to eat the whole garlic clove LOL but I'm going to put some of that garlic oil in my soup.

I'm still at the beginning of the video, but you are correct. In studies, patients that were given a drug and told it'll help them feel better reported that they felt better. Easy if doing meal for self and sick, to bake burger patties, pour can beef pot roast souo into instant mashed potatoes to make croquette patties on same burger oven tray. Should add olive oil. Can broil for a few min before taking out. Love the farm animals, relaxing...know hard to feed when sick, keeping health remedies goes a long way.

I love Elderberry as Jelly ❤ my mom does it for years and I love it with oats or simply in bread with some curd cheese 🤗 in spring she will do the elderberryflower jelly it’s also pretty delicious 🤗 I’m from Germany and we don’t eat the elderberry’s raw because they will hurt your stomach 🥺 greetings from Germany 🤗

I made the garlic honey on Sunday. It's now Wednesday and there is foam at the top of the jar with pressure building rapidly. When I remove the lid it hisses like a soda bottle. Does it now have botulism? If it's safe, how do you keep it going for 2 weeks this way before putting in the refrigerator?

I love elderberry anything. Now the smell they put off when cooking makes me gag. Smells like an old person's home that hasn't had any windows open in years, old musty.

I was about to ask if you ever considered to steam juice the elderberries and can them so you‘d have them on hand if needed. Just warm that up add you honey.. but then you said you always make it fresh… I also don’t like the taste of them but I‘ll drink it for health benefits.. And as I‘m from Germany we‘ve been told to never eat them raw because they‘ll hurt our bellies..

While it’s true a peach tree won’t have blossoms and ripe fruit at the same time, the decoration on your pot is from a tradition of botanical illustration. The idea is that the illustration shows several stages of the plant’s year so one can identify the plant in different seasons of the year. So you’ll see leaves, twigs, blossoms, ripe fruit, fruit gone to seed. Sometimes there will be a thumbnail of the entire plant included. Sometimes there will be insects, butterflies, birds or small animals associated with the plant. Thought your observant youngster might like to know this sort of illustration has a long tradition!

Chelsea, if you have never done this, can meatloaf. It is SO good and handy to have on hand. Use only wide mouth jars, quarts or pints your choice. My 97yo dad absolutely loved having it in the pantry. I tried to keep premade meals on hand as he would get his own meals from what I made. As a gluten free person, I use instant mashed potato flakes instead of bread crumbs. I also make and can spaghetti sauce which is grand when I don't want to cook. It is great pizza sauce as well. Green tomatoes which have shiny skin will ripen inside. I use trays with covers or nursery flats to put them aside.

I too make elderberry syrup but I simmer ginger root, a cinnamon stick, cloves and a vanilla bean and add raw honey after it's cooled. all have great health benefits!

I add red/yellow/green finely minced peppers to my meatloaf. It is really good. I also add dash of Worcestershire Sauce.

I’ve done a similar thing of the garlic infused honey, with my favourite olive oil, put into a small bottle, when I don’t want to use the cloves.

As you mentioned, some people complain of an upset stomach from elderberries, it is actually the seeds that cause this as they are toxic. But you strain yours quite well so probably no issues there. The syrup is excellent but more work, great on ice cream. But you can also add a bottle of cheap brandy when preserving it as a great cold remedy……love your videos!

@@sweetdweams If you are putting fresh berries into alcohol to infuse, it should be safe, just strain them out when you use the tincture. If you use them for tea and boil them with the seeds, it may give you an upset stomach but wont harm you…..unless you ingest a lot. :)

I use a steamer to get all juice from the berries. Super easy. I have a gallon of juice in the freezer for jelly.

I use my kitchen aid mixer for combining the meatloaf. Just until mixed, then form. My hands ache so badly when I try to do it by hand.

Breathe easy tea has been the absolute best for restless coughing if I'm not mistaken it also has licorice root in there which helps as well ❤ I tried the garlic in honey ferment last year haha I think I need to suck it up or find a better way to eat it... 😂

I add 1 tbs dill relish, minced onion and bell pepper to my meat loaf. no chili powder but everything else goes in that you added.

I found with a scratchy cough, is to let while milk come to room temp, and Sip it.the Fat coats the throat and eases the pain

If you mix the egg, oats and seasoning together first, it is easier to mix in the meat. Add all that first in the bowl abd whisk together. Then add the meat.
