Chelsea, the beginning of this video rang really true to me- I think, if you are the family food preparer, the nicest thing you can do for yourself is make the dinner decision in the morning before the busy-ness of the day! Or the night before if necessary. Takes all the "whats for dinner" stress away, and you make good choices!

You’re so right about the bread We were dirt poor growing up and mom made all our bread. It was a treat to get store bought bread our cousins only got store bread and didn’t understand why we would get excited for it. 😊

Take the rest of your unripe tomatoes and turn them into chow chow and salsa verde! Two great condiments for cooking! Chow chow goes great with beans/dry peas and cornbread. And green tomato salsa verde is excellent for adding to Mexican dishes.

When we're kids we ate elderberries right off the stem and we never got sick. Our hands were purple so mom had us soak our hands in clorox water.

I know near New Denver (where our aunt lives) they had a garlic festival each year. We were really looking forward to having some shipped (as we are huge garlic lovers), but unfortunately the festival was cancelled…hopefully not permanently. Great video!😊

If you put two or three marbles in the bottom pot with the water of the steam canner they will bounce up and down and make noise when you get low on water. Then you wont burn it.

When I make elderberry syrup I add astragalus, rose hips, oranges, lemons, cinnamon, cloves, star anise, raw honey and some rum or vodka. I must try BeeBalm and echinacea. I ferment garlic in honey with black cumin (nigella sativa).

STEAM CANNER. Put marbles in the water in the bottom level. When the water is about to boil all the way away, the marbles will make a racket and remind you to add water. Sure saved me multiple times.

Have you ever tried using cream of tartar to clean a burned pot or pan. Fill with water to the top of the burn and add one to two teaspoons of cream of tartar. Bring to a simmer and let it sit. This also works for burned on food. Loved this video with the family interacting. 😊 I like the way you had the kids try the tea before you did. 😊. Do you have a video about your family. They look like a great group of people.

My husband was sad that I used the vitamix to blend my tomatoes instead of using the food mill last year, because then we had no tomato powder. At this year I will mill at least some so we can add it to guacamole. I’m very much a Hurricane cook..

When my husband was little he decided to run away. A wise old grama that lived near them saw him and decided to find out what the problem was. She took him inside and offered him a sandwich. He told her that his mom never bought bread. Well the truth is that she didn't buy bread bur she made bread for her large family twice a week. I am from a large family of 12 kids. My mom made bread every other day and never bought it either. lol Love your channel

Citric acid works very well to get burnt bits off of pans. I use it instead of vinegar for everything except pickles of course. I hate vinegar smell!!

Please tell me you did this over several days and just didn't change your shirt!! Oh my goodness. I couldn't possibly keep my mind on so many tasks at once. I also have a steam canner - last year so am new to using it. It is so much faster than a water canner. Everything looks wonderful. Take care and enjoy your hard earned harvest.

Oh my gosh Chelsea, what a wonderful video and so inspiring. I have only been pressure canning since last Spring, water bath canning for some time longer than that and then getting into stocking my pantry properly since last August. That was mainly thanks to Allison over at @thispreparedlife who, along with you, is one of my very fav accounts. I've made some notes, love the idea of the pickled carrots especially due to the cinnamon. Have you tried picalilli, this is like your very prettty, mixed pickles but has turmeric in and the vegetables are in a kind of sauce and this is delicious with cold meats. Going to head over the to Q and A video as always interested in temperatures etc - my pantry is in one of our cellar rooms and is generally around 15 to 16 degrees F and the humidity around 80 - 85. (I love Jessica's channel, too, but a freeze drier is something I could never have the money to invest in, but love my little dehydrator which I'm learning to use.) Dan did a great job on the camera and I'm looking forward to your next video. L.xx

What size is your steam canner? I have 2 water bath canners that use alot of water. I'm thinking a steam canner would be better. I'm going to grow Echinacea next year. I really do need MORE property...lol. My husband and I live in a village with a little over a 1/4 acre. Not enough for what I'd like to grow. Have a wonderful weekend. A little trick I learned after destroying a couple streamers is to put a couple glass marbles in with the water. The marbles will bounce around in the water. When you don’t hear them it’s time for more water 😃

Never realized elderberries we're considered poisonous when raw. Us 6 kids were sent to pick all the elderberries which were made into jam, syrup and wine. While picking we would have a couple different contests at the same time. The first would be to see who could eat the most. We would pull a handful of the stems and toss in our mouths, popping them with pressure from our tongue and teeth. We didn't actually chew them because of the seeds. Then it would turn to a spitting contest to see who could spit the seeds the furthest. I don't remember any of us getting sick from it but then we probably didn't consume more than a couple child sized handfuls at a time. For us the really tough challenge was to eat a quince straight from the tree.there was only one brother who reigned supreme by eating a whole quince. Can't imagine youth of today being entertained by such things. You are right about the difference between the taste of homemade versus store bought. Mom baked bread once a week. Always loved the thick slices of bread still warm with homemade butter melting on it. Later in the week as the bread was losing its freshness we preferred it as toast slathered in butter and jam or to make our opened face cheesy eggs on toast open faced sandwiches. I was almost 9 before I tasted store bought bread. I was amazed at the texture and would call it air bread because it was so light and thought it strange that I never felt full after eating a sandwich with it. Impressed by the novelty of it I took a few years to realize that the word air not only described the texture but also the flavor.

I have a question with the citric acid is that 100% organic that you're using and if it is could you maybe give me a name of where to get it because I didn't know that you could do it like this without doing it at home I know that you can take citric acid from fruit and you can dehydrate it you can also freeze dry it now but back then they didn't have that when I was growing up I'm only 53 but I'm still old enough that they didn't have it back then God bless and thank you

That is something that I believe is so important, but u don't see much of anymore....That's families sitting together for meals...My grandmother insisted on it, when she was alive...She was the Mother of 13 kids, many, many grand children and great grand children..My mother was the oldest of her children... Grandma knew what she was doing too...She was the best cook I've ever known..But she also knew communication was key in a family....We would converse at the table so everyone knew what the other was up to, or what events were coming up, and who had a crush on who at school..Grandma always played the piano,or Organ for the First Baptist Church and took all of us to Sunday school....and for her while life gave 10% of her income to the Lord...When she died, the family fell apart and everyone went their separate ways...but I'll always hold a special place in my heart for the hands held around the table to say grace, thanks to Grandma...

To increase the acidity. If you’re using a pressure canner it’s not necessary but for water bath and steam canning it makes low acid tomatoes safe.

I live in Italy and almost all xab their tomatoes ...I do the same to but no one put salt or citric acid and I only add a bit of salt but never citric acid, it's terrible and so damaging to the gut flora..just saying.

I’ve heard that before. Adding lemon juice if citric acid is the way I grew up doing it and falls under the safe canning guidelines here in North America. That being said, I’m open to that information being wrong so I’ll look further into it. Thanks you.

Since I moved here in central Italy from London UK over ten years ago I saw how old ladies do their canning here and by the way pressure canners don't exist in whole Europe, people just water bath...If it's a low acid foods like carrots or meat, they add salt and a bit of vinegar and water bath for many many hours, if it's high acid like tomatoes or fruits, they just water bath it without adding anything. i know that's considered unsafe by your standards but it's been done and still done in Europe like this forever. Anyway, good luck with your winter preparation 👍🤞😊
