Hello Chelsea, I want to use the sweet peppers instead of the dried chili hot peppers. How many cups of sweet peppers did you use? I want to do this enchilada sauce recipe tomorrow. I have a load of tomatoes cooking in my roaster; I can't wait. Thank you so much!

Making brown sugar is really easy. 1 tsp molasses to a cup of sugar, you can add more if you want a darker brown sugar, Then just mix it in a kitchenaid or by hand until its the right color and consistency. It so easy you never need to buy expensive brown sugar or run out again.

Suggestion for your daughter selling bracelets at the farmers market: take some pictures while she is making the bracelets and have them on display so people can see how much time and effort she puts into her creations. She can also demonstrate how she makes them.

Sloppy Joe’s don’t have to go on top of buns, it’s fantastic on top of potatoes, sweet potatoes and rice or over squash. Just thought you may not have thought of that. Sometimes we have it in top of toast also…

Thank you so much for sharing the enchilada recipe. That helped me in a funny way. I saw the recipe about a month ago and ordered the dried peppers so I could make it. By the time the peppers got here I had forgotten which recipe they were for and it’s been driving me crazy. As I watched your video I was thinking that it would be a great addition to our pantry. As soon as I opened the link I realized it was the recipe I’d gotten the peppers for 🤣

Chelsie if you put a small amount of water in the bottom of the roaster oven it helps with heat distribution and food will not burn nearly as bad I learned that from that 1870s homestead and I tried it and it worked perfectly! Love your channel ❤️

Hi Chelsea, just wanted to suggest you bloom your spices by adding them to your onions as they’re sautéing. I bet it will add another layer of flavor to your already delicious recipes.

Have you thought of makin gyour own brown sugar? You can also make molasses milk out of the molasses so that it's not a single use item. My sister's kids really like it. also, you should be able to put water in the basin of your roaster to create a double boiler type thing so stuff doesn't burn

WOW. How do you get so much done in one day and take care of children and animals. I'm in my 60s and I am exhausted watching you. Dan is a huge help and I only film on days when he can be available. Most of my kids are teenagers now so are pretty helpful when it comes to farm chores.

Okay so if you get this stuff it's called fly trap at home Depot didn't get the powder packages or you can get the powder package in a hanging disposable I recommend that one. I live in Maine there's a lot of house flies and horse flies that thing will literally fill up it is amazing it is the best stuff I've ever used in my entire life. I highly recommend it you won't have a fly issue anymore

@@LittleMountainRanch Minced meat was originally a way to preserve meat that was going bad, using sugar and salt. Aromatic spices and dried fruit was added to make the older meat taste better. Later it was just the fruit and veg but suet was still used for fat.

Minced Meat is one of my favorite pies only my Father and I liked it but it was always on the table at Thanksgiving. My absolutely favorite pie is Boysenberries, Coconut cream pie, banana cream pie, I really love all desert's no matter what only now I have to make it my self. Both my Parents and Grandparents are no longer with us and I find it hard with a hand mixer I wish that someone would gift me there old stand mixer in good shape and condition. I’m surprised you don’t make your own brown sugar. I do about a Tbl of molasses to every cup of white sugar mix it in my Kitchenaide mixer with the whisk attachment. More or less molasses to your taste.💗

You can make your own brown sugar with molasses and white sugar. If you want you can add white sugar and molasses to a recipe and mix it up then. 1c sugar + 1tsp molasses.

Great video 🍅 So enjoy all that you do. I just finished up canning my pumpkin, 23 - pint and a half jars and 10 quarts. Today I will work up 25 pounds of cranberries. Think I'm going to try Rachel's sloppy Joe recipe also. 😊

I see another person made this suggestion as well. I never buy brown sugar anymore. I make it with white sugar and molasses. Easy peasy and cheaper too! 😊

Ground meat cans beautifully which is a good thing since what made me finally brave up and pressure can was my homemade spaghetti sauce recipe. It was handed down from my mom and I grew up eating it, so the store bought stuff is just meh to me in regards to flavor. I now make 5 gallons at a time and can it since we go through it so fast. Yes for sure have a jar fetish going on here too! I went to a family dinner at a restaurant that served the dessert in quilted pint and half-pint jars. I was admiring them on the table right before we left. Out in the parking lot, my cousin and MIL reached into their purses and pulled out two jars each and handed them to me! You know you have an obsession when your family become enablers and “secure unsecured property” for you. 😹😹😹

Hi Chelsea! Mincemeat is a great idea to use up green tomatoes, definitely going to try it if I ever have green tomatoes at the end of the season. In Dallas, they usually ripen on the vine so we only get a few and as southerners, we have to have fried green tomatoes! I've enjoyed your vlog style videos, it's helpful to see how you juggle and pivot what you're doing according to what the day brings. Thanks for bringing us along!

Dan was watching the video for me before it posted and laughed outlaid more than once at how often I change the plan, or just throw in whatever I have. I didn't realize I did it so much until I started filming myself. I honestly don't know if I ever follow a recipe exactly. lol

Oh my gosh I love that you made the mince meat filling without the meat! My dad loved mince meat and I loved the spices, apples and raisins in it, but couldn't get past the meat aspect. I am totally stealing this idea to put on oatmeal, ice cream pancakes and of course pie ☺️❤️

being way older than you i love reusing all the jars its like xmas receiving jars that weren't yours when buy new ones, by new ones, i say, they were someone else's years ago, i get all my jars from the Amish store near me for 2 pints and 5 quarts, this was the first year i ran out of pints, probably because i added onion jam to my storage as we don't have space inside to store a ton of onions. Your amazing, love the family eating leftovers also, around here no food gets wasted,,,,have a great blessed week to you and your Family

New here, but loving your videos. My nanny and mum always taught me 1 x for dinner and 1 x for the freezer. That way you always have a variety in the freezer for days when there's no kitchen time. Now it's only me I still do it, some days you just need an easy day Also it's nice to eat a "ready" meal nearer to Christmas and holidays - less hassle on present wrapping or buying days. I can currently eat for 1 x month out of my freezer and another month from my pantry should anything go wrong health wise etc

Been watching all week. What an awesome lady you are. I loved living on the farm in HS after moving from the suburbs of my childhood. We did not run a farm, just in the farm country. Many kids in HS lived and worked their family farms and I was able to learn and help many. The #1 thing I loved. Were the monthly invitation to the Farm Bureau Meetings. Usually at my neighbors house but sometimes others homes. It was a POT-Luck on steroids. They covered different subjects each month from a list of 1000's of subjects, issues, products. Ect. The food was amazing. Do they do anything like that up your way. I felt it made the community stronger and benefitted each and every one that came. Love your passion, prepping and energy. I wish I had married a gal like your husband Dan did; your a GEM. Are the kids all yours or some adopted? I love how you have them doing chores. Just watched you pantry video; Love , Love Love. big Q. Do you make Gazpacho, with all those veggies it is a wonderful soup and you can eat cold in summer. Love your heirloom tomatoes. Loved the large beans (red Limas?) I love ford hooks but the are hard to find. Oh, I can't grow anything I live in a tiny apt. and I can't move around too much. But I love FOOD, and just about anything folks do with and for preparation. Keep up the great work. All the Best. John. Enjoy the love and family time, Holidays.

Enjoyed the video. Busy, busy day. A suggestion for the mincemeat, put the tomatoes and apples through the meat grinder with larger holed screen. Quick and easy. Going to try the enchilada sauce. Running out of ideas to use up the bumper tomato crop. 🙂👩‍🌾

So I live in Maine and we have a lot of flies and I have found the stuff called fly trap at home Depot and you can get the powder and use old jars or you can get the bag that you hang. Let me tell you it is amazing! So my family lives on the Canadian border and there was a pig farm and I told my cousin about this and she can't buy enough of these. Because there's so many freaking flies coming across into the US. And I'm not dissing Canada that's part of farm life. I am parked Canadian. But what I'm saying is that flytrap is amazing and they also have one for hornets amazing exclamation mark!!

I used to see my grandma and mom can huge batches of stuff as a kid and I cannot figure out how you all can that much in one day! Incredible! I takes so long to prep, keep reheating and running that pressure canner which takes forever

Wow that's a lot for 1 day. I am new here. Just got into canning about 2 years ago and we'll I now can everything I can. I love the old jars. I get them from family that there great grandma canned and no one wanted to keep them. So blessed to have them. God bless you and your family

put a couple quarts of water below your roaster pan in the base to help distribute the heat

I know that you have your tried and true recipes...but you should check out Fannie Farmers green tomato/green apple mincemeat. Very similar the ingredients you used, but the tomatoes and apples go through the grinder...plus lemons, rind and all. It is amazing!

Flies here to. I run out of things to sometimes that I swear I had so love hearing someone else does to :) Loving the squash at the patio door. I love seeing someone else do things they way I do them not by the so called book but who cares it works :) Yes I have a thing for canning jars too. The bracelet is beautiful. I will buy one if she ever starts taking orders. Everything looks so delicious!!! I can almost smell it. Yum. Very successful canning day. Hugs

Make your own brown sugar, so easy. Cane or white sugar mix in molasses in. If you want dark add more molasses

I love jars too you have some like I am trying to find I only have one and I put pealed onion in it and then I have cut up to add to any things onion makes every thing better

Amazon sells the yellow sticky sheets you can put in your greenhouse to catch knats…..I use them around the kitchen near bananas, apples etc. And they are good at catching flies and stink bugs…. There are two sticky sides but I cut the large sheets into strips and only take one side off nd when that fills with bugs I pull the remaking paper off and cover over the used side with it…. I put on the window sill and I open paper clip and hang them around where ever Insee them flying around. Once you make your own brown sugar you’ll never go back to store bought….it’s easy. Old canning jars are $6 and $7 a piece at our second hand shops…..

I love watching videos like this. They encourage me. I want to learn to can so bad. I did buy a dehydrator this summer so going to do that during the winter and start collecting supplies for canning. Where do u get that huge paste can? I too freeze paste. Tell your daughter that her bracelet is so pretty!!! My daughter who is 19 has started a crochet business and did our market this year. Tell her good luck!!!

Whew!!!! I think I need to sit down after watching all that!!!! Where in the world do you get all that energy??? I used to teach kindergarten and had the energy for it, but now I couldn’t even imagine! Tomorrow I plan on canning beef stew and that will do me in for the day! Great video! Enchilada sauce looked good! How did it taste over it went through cancer?

The secret to my energy is an afternoon nap everyday, without fail. It gives me the extra boost I need in the afternoon. I haven't tried the enchilada sauce yet, but will do this week and let you know.

You can make your own brown sugar with regular white sugar and molasses. I'll have to get the amount of ingredients to you, if you need.

I was lost on the enchilada sauce. I'm from the south west and tomatos are never added to enchilada sauce. I thought that was the sloppy Joe mix. So I'm definitely going to have to watch the video again. 😁👍

⁠@@LittleMountainRanch You use chili peppers to make enchilada sauce. There are NO tomatoes, and NO sugar in enchilada sauce. There is a sauce called Entomatada sauce that is made from tomatoes. Different animal.

My grammy and mama always made brown sugar with molasses and reg white sugar, Not sure fi anyone else likes doing that but it taste better than any you can buy

So I was watching acre Homestead and she frees dried a lot of her tomatoes. And when she added it to her sauces if thickened it right up. Something to think about

Wow .. that's a lot of canning. I have never thought of canning my own mincemeat. I might have to try this sometime. oh and btw... My husband says I have a problem with canning jars.. lol... very impressive oh and btw.. I made sesty dilly relish out of my green tomatoes last year and it was a big hit.. I wasn't very fond of the hot dog relish I made with green tomatoes though... I didn't care for the texture and I prefer a bit sweeter hot dog relish oh an Happy Thanksgiving!

you can use molasses if you don't have brown sugar. Not sure of the ratio but use white sugar and molasses together.
