I have cut up pork loin like this the last couple of years. The steak I can make whatever size I want or need, thin ones smoked are delicious. If I buy them already cut they usually are fatty. Been thinking about making Salisbury steak for a long time now. Thanks for the “kick in the pants” and the recipe! I bought a huge sale pork shoulder roast around New Years, as one does. Just two of us, but why not have extra to play with. Did half on pellet grill and canned 4 quarts (raw pack) with the rest. Went overboard on buying sale burger (30 lbs), and now have 7 meatloaves and around 100 meatballs vacuum packed in the freezer. Already had quite a bit of burger canned. One thing I can say, we ain’t gonna starve! And maybe I can share😊
