Live Cook! Cheesy Beef Enchiladas w/Poblano Salsa

Cheesy Beef Enchiladas
1/2 stick butter
1/2 yellow onion (diced)
1 lb ground beef
1 Tblsp garlic powder
1 Tblsp Cumin
1 Tblsp Chili Powder
Salt and pepper to taste
1/2 C flour or corn starch
1 C water (may need more as you go)
12 soft corn tortillas
1/2 C shredded cheese of choice
Saute onions in butter until onions are clear. Add ground beef and spices. Brown and drain oil if it is super fatty. You want some oil left in the meat to be able to make your rue. Add flour, mix with meat and cook for a couple of minutes until it is incorporated well. Add water and stir creating a creamy gravy. Soak tortillas in sauce one at a time. Add meat to soaked tortillas and roll. Repeat for each tortilla placing them in a baking dish. Add more water if needed to continue soaking the tortillas as you go. Dump the remaining meat mixture on top of the rolled enchiladas and add cheese. Bake at 375° F ( 190°C) until cheese is bubbly. Enjoy!
Poblano Salsa
2 Poblano Peppers
2 Jalapeño Peppers
1/2 yellow onion
4 cloves of Garlic
4 Roma Tomatoes
1 Lime (juiced)
1 Tblsp Chicken Bouillon powder
1 C water
Char peppers on all sides. Put charred poblano peppers in a plastic bag and set aside. Char onions, garlic and tomatoes on all sides. Cut stems off of Jalapeño peppers. Removes seeds for a milder salsa. Use a knife to peel poblano peppers scraping them on a flat surface. Remove stem and seeds from poblanos as well. Add all ingredients to
Blender or food processor and chop to desired consistency. Pour in a bowl and enjoy!
