The more human and natural these videos are the better, love how Tony can't explain it 100% leaving some of the skill and black art unsaid, love that and he seems like a super nice guy. Coffee should have a personality.

hello super video again again. but when you use timer on the acai and espresso machine they are different, lunar when the first drop hits and the machine when started. so what time is the right one to go for, thanks from Denmark 👍🎄

Hi DDS, Personally I use 1st drip to start timing. Why? Because so many differences in extraction characteristics of the various machines I use. some have pre-infusion some don't. Different pump types vib/rotary reach full pressure at different rates. Do understand timing is the most basic method of knowing you're in the ballpark of proper grind size. Next level is weight. hi thanks for your great videos, really helpfull. could you show haw to set the zero point? i have this grinder and struggeling with a lot of channeling... (setup: Vetrano 2b, IMS Shower and 18g Basket, Barista Space Leveller and Tamper 58mm) any advice?

Setting the zero point just helps with adjusting your machine. So you know, how much finer you can get. If you have this grinder, partical inconsistency just not be a problem. Maybe it's a distribution issue. Do you use a distribution tool of any kind? If not, this helped me getting way more consistent shots. Also I experienced channeling, when i grind too fine. The preassure builds up to a certain point and then just "breaks" through the weakest point of the coffee puk. Also like Marc likes to say "grind setting is never set and forget". Over time, you have to readjust your grind setting as the beans get older. Is your coffee fresh enough? Best advise I can give here is, don't buy your beans from the supermarket. They usually lay around in the store for some time and proceed to get stale. So when you buy them, it's already old coffee beans. A bit late, but I hope this helps :-)

So, Marc in your video of Aug 15, 2019, you mentioned getting 60ml from a double shot pour in 25 to 30sec and here Tony talks about 36g (36ml?) of volume for a double shot pour with the same timing of 25 to 30sec. I'm a little confused. Maybe you could clarify if I'm missing something.

Hi big, Some difference in brew ratios used. Also differences in volume in ml to weight in grams. 60ml volume will not weigh 60g. Weight is typically a lot less due to gas filled crema. Tony's brew ratio was 1:2. Espresso can range up to 1:3.5 depending on personal preference. Using weight is more accurate than using volume measurements. Marc

I just got my pro 700 and was wondering why my steam pressure at 1.5 and not 2 like the way you guys usually have it?

Hi vk, Congrats on your new machine - one of my favorites by the way! Most likely need to turn up the temperature setting of the steam boiler. Doing so will increase the pressure. If working in Fahrenheit it probably comes from the factory set at ~265F. Turn it up to 272F and you will get the near 2 bar pressure in the boiler. Hope that helps! Marc

Can you make the grind finer without having the grinder on? I always thought the grinder had to be running when going finer.

Hi Bob, Thanks for the question. Usually not a problem to adjust grind a little finer without the grinder running. There is a risk of crushing beans between the burrs to the point the motor will not run. If that happens stop the grinder immediately. Grinder in this video has a powerful motor and start capacitor so usually not a problem when making small changes when dialing in espresso. Marc

If i get the baristapro 18g basket, is it okay if I put 16 or 17g in it? or is it recommended that I stick to the 18g?

Hi AS, Yes. The gram ratings of baskets are approximate. Dosing a little below the rating is not a problem. Marc

Hi NS, You can if you like. Just understand it's not unusual at all to go 30-50 seconds if using extra long pre-infusions. I've done plenty of low flow pre-infusion where first drip doesn't come until 15-20 seconds after pump on. No way my shot would be done in 5-10 more seconds. Marc

@@gigi9467 Curious why you want more steam? Are you running out? Is the power not high enough or something? Have you tried using the 4 hole steam tip? apperently it increases the power enough that its difficult to keep the milk in the pitcher

@@BlasphemousTomato back to back lattes will make the machine less consistant in the steam production department but i mean just slightly i just have to remember to give it some time to bounce back like maybe pull a shot or something also just wanted to know what the next step up would be

You're using 18g of coffee. Is it an 18g basket as well or do you use a larger basket and leave "headroom"? Also, is it always a 1:2 ratio as a starting point? That is, 18g coffee to yield 36g espresso; 13g for 26g espresso; etc.? Thanks!

Hi Bob, Thanks for the question. Most 18g baskets have the capacity for 18g coffee and will have appropriate headroom. Yes, a 1:2 ratio is an 18g dose with 36g by weight (not volume) in the cup. You never mention the adjustment of the Flow Control and what that should be set to? Is it completely open when dialing in? Also the gest mentions that he set the grinder to 1.6 but the video it shows him setting it to 1.4.

Hi GP, To get stock flow rate when dialing in open the FCD 1.25 turns from the closed position on ECM and Profitec machines. That gets you unencumbered flow rate matching stock which is ~8g/s for vibe pump machines and ~11g/s on their rotary pump machines.

Long purge especially on that grinder, I thought the shot still a little fast I would have gone closer to 28-30 secs rather than 25 just to compare the taste. Tamping down on spouts rather than the flat not ideal

2:25 - So Marc asks if he uses the time from pump being on, or first drip. Tony's answer? There's a timer on the machine and on the scales. That's not the answer to Marc's question! 4:07 - Marc asks how important is it to be consistent with the weight (in the portafilter). Tony's answer? This scale is pretty accurate. What?! That's not the answer to Marc's question! You guys lost me there.

Hi Huda, Thanks for the comment and request. I do not have access to that machine so can't do a video using it. Some advice: Start with good quality whole bean coffee. Italian style bean blends are easy to work with. Grind those beans right before brewing with a quality burr grinder. Dial in grind size as detailed in this video: kzbin.info/www/bejne/oIC8aHdmZ9Nnedk Getting grind size right is critical. Fill your PF with same amount of coffee every time and tamp it level. Extract 50-60ml in 20-30 seconds from first drip. Hope that helps! Marc
