Made them in Colorado at 8600 feet didn’t do any altitude adjustments and they came out awesome thanks! My husband was addicted to Einstein bagels chain when we lived in the city. Now that we are up in the mountains I don’t get to town very often. They are a keeper recipe. Going in my recipe box!

I just made these bagels and they turned out well. Last week I tried bagels for the first time and made a sourdough recipe for them. They ended up on the compost pile. So I tried your easy plain bagels to learn how to make them before progressing to the more difficult sourdough bagels. My plan worked. Your instructions are easy to follow and I learned a lot about making basic bagels. Thank you! I enjoy your podcasts even though I am too old to start homesteading and raise pigs and chickens and goats. I find them very entertaining.

Love the video! I am learning a lot from you. Actually, I am a professional chef and trained for 4 years at a Hilton hotel. This is what is so nice about my profession - you never stop learning. You guys may find this funny but if you touch something really hot like a bagel or a hot potato and want to go under cold water, try grabbing your ear lobes instead. You will be surprised. Just like I was when I found out that you can actually deep fry and oven bake ice cream lol

My whole family loved them and the biggest critic (my 9 year old) thought they were shop bought.., could not believe that they were home made. We had them with pink salmon, advocado, baby spinach leaves and a poached egg on top. Huge hit ..., big thank you from my whole family.

I have another batch rising right now and I added cinnamon and raisins to this batch. Smells wonderful and I’m sure they are going to go perfectly with our homemade strawberry jam! Thanks for such an easy recipe. I’m going to make the English muffins next, as I also made the crusty bread last night for our cheddar broccoli soup. TYFS!

Still hot from the oven!! They are delicious and everyone is in agreement with that! Only change I made was used half bread flour to help with the chewy aspect. Delicious!! As my husband is chewing his first bite he said “are you making more?” Lol Even my picky daughter exclaims how yummy they are!! I’m gonna tackle a cinnamon raisin one next! Thank you so so much Kevin!! And thank you to the three lovely ladies in your life ❤️

Would love to hear how you approach the cinnamon raisin and how they come out. Thanks.
@masuganut20826 жыл бұрын
canadice1999 sure! Well I didn’t have raisins but I dipped some in cinnamon sugar which was ok at first but then afterwards they were wet on the outside from the sugar melting in the oven . When I do it again I would just mix the raisins in and cinnamon before I add the water and just proceed as normal. I would eyeball the amount of raisins you want. Could even try dehydrated cranberries some time. Same with the cinnamon. You’re gonna have to judge it based on what you like. I tend to like things cinnamony 😄 I would just make sure to add all of that before the water. I was also thinking of adding a smidge more sugar in the batter but we will see. I’ll try to remember to post again when I make them. I made cinnamon raisin bread over the weekend so, same flavors but that doesn’t help you If you make it before me I would love to hear how it worked for you 😄thank you
@masuganut20825 жыл бұрын
canadice1999 hey so I know this is way back but all I did was continue throwing raisins into the mix (before the water) until I was satisfied with the raisin ratio. Just eye balled it 😉 and added cinnamon. Again we eye balled it. They were for my daughter so when she came over and was telling me that it looked and smell good then I knew I was done ❤️

Reading the comments, it looks like you have a good recipe. I make mine a little different. One thing I do is add a little sour dough starter to my dough. Another is letting them ferment in the fridge overnight. Lastly, I add a 1/4 cup of baking soda to the boiling water... it helps them brown nicely in the oven. I've never thought about flipping them after 10 minutes, though. I'll have to try that.

If you weigh the flour, instead of scooping then the amount of water will be almost exactly the same every time. The reason the water amount varies is due to the moisture in the flour. If you weigh the flour, then the moisture content is taken into account and you then have the correct amount for your water.
@hermithag6 жыл бұрын
I've noticed that's more of a UK practice. What does 3 cups of all purpose flour weigh?
@fern39606 жыл бұрын
@@hermithag One cup of flour is 140g or 5 oz. The nice thing about using weight is that it does not matter about the humidity or whether the flour is compacted or sifted. Most professional bakers tend to weigh ingredients. I like to mix flours, so I put my Kitchenaide bowl on my scale and add different flour [white, wholewheat, oat, rye, spelt, etc] until I get to the correct weight. It is easier than trying to remember if I added that 1/2 cup of rye flour.

As a previous baker at an upscale bakery, we weighed every ingredient except the smaller scaled items like salt, baking powder, and baking soda. Some recipes we even weighed the eggs because they are not always the same. Get a decent scale for it that can weigh lbs and grams. Then using your favorite recipes simply weigh the item after you accurately measure it by cup size.
