12 bunches of green garlic
5 tablespoons of salt
2 1/2 cups of water
Two 16 Oz Lebni containers
6 pounds of Panella cheese whole milk
6 tablespoon salt for the cheese
Step 1
You will need 12 bunches of chopped green garlic into small pieces put in a glass jar; add 2 1/2 cups of water and mix 5 tablespoons of salt, add the green garlic and leave it in the fridge for 30 days(wait until the garlic becomes dark green).
2. After 30 days take the garlic out of the fridge using a strainer basket, pour jar of garlic into a fabric cloth, squeeze all the water out then put into strainer and add a jar of water (or any weight) on top of the garlic bag to strain excess water.
Refrigerate for an additional 5-7 days to make sure all the liquid is out of the garlic.
3. Empty both containers of Lebni in the cloth bag and try to get rid of any liquid, then add a jar of water (or any weight) on top of the cloth filled with Lebni to drain as much liquid as possible the. put it in a strainer and refrigerate for 5-7 days.
4. After 5 to 7 days the Lebni and the Green garlic should be completely dehydrated,
Cut the cheese into 2”x2” cubes then mix the garlic,Lebni, & salt with the cubed cheese.
5. Take handful at a time and compress with cheese mix while you compress with your fist until filled to the rim. Cover it with 2-3 grape leafs
and add a thin layer of fabric on top of the jar preferably chiffon fabric. Secure it well by tying it with Cotton twine.
6. Find a spot in your backyard that does not have sun exposure or potential exposure to water, dig a hole in the ground that would be larger than your jar.
Put the jar on top of a clean round rock and flip the jar upside down, then cover it with dirt leave it for three months. Mark the spot so you don’t lose track of placement.
7. After three months carefully remove the dirt(note: not to break jar will excavating) take out the jar of cheese, clean the glass jar carefully while being upside down.
Empty your cheese in a plate and enjoy it.
