hard candy isn't the only candy affected by humidity and pressure, chocolate won't even think about cooling right if the humidity is over 75%

I'm just learning chocolate, so I may be wrong here, but chocolate is clearly effected by humidity, but not in as calculated way as hard candy, or not one I can correct for. Air pressure seems not to effect it as it has little or no water in it. Tempering is all about crystal control, and that is still whipping me. I've put off learning it better until I can finish a chocolate room with temperature control.

Thank you for explaining about air pressure and humidity and how they effect candy making. My mom has a candy recipe book for our altitude and she protects that book so carefully! I've never successful made candy from a recipe that wasn't from that book.

This is so lovely! Stay safe during the hurricane! I'm one of those that uses you to fall asleep as your voice is so soothing. It's one of the reasons I love your poetry readings. I also had an idea for an image candy! a log design or a yule log cake design where the log has red holly on one side. IDK what you'd flavor a candy that looks like tree rings, but the yule log cake could be like a chocolate-mint after dinner mint flavor.

We used to live in Tallahassee (and visit your store!) Now in Denver, funny coincidence. My friends have been reporting about the wind. Ugh. It was so hard to read about their experiences. I can’t imagine being there. We were there for several tropical storms. But those were mainly lots of rain, Debby comes to mind in 2012. I hope all is well with you and yours.

I may have just found my favourite yt channel. Ordered three bags of the cinnamon love hearts, the sugar free nectar (especially loved the way they looked) and forbidden fruit 2. Cannot wait. Edit: just got to the point of you saying the relaxation part and i can say the same as the other comments. It’s really relaxing and will probably fall asleep to the vid. We are safe. Power is out at lofty and my house. Suspect thousands of dollars of loss for ice cream and food to be thrown away tomorrow. Don't know about physical damage. Still not too safe to inspect my house let alone drive across town.

Have you stopped to consider that maybe if you stop making Hurricane candy the Hurricanes will stop appearing? I mean suuuure, the telescopes observe them but are telescopes *really* an observation of Schrodingers Hurricane? I dunno where I'm going with this comment. Maybe you just make the candy to sacrifice to the Hurricanes so that maybe next time they'll mellow out a bit. \\o/
