Next time you're out doing a cat catch, clean. You should take some fresh limes out on the boat. When you get a catfish in the boat, give it a good despatch with a priest and fillet it there and then. Once you've filleted it, slice the fillets really thin, then put them on a plate. Cut the limes in half and cover all the thinly sliced fillets in lime juice, then sprinkle lightly with some sea salt over the top (smoked sea salt is best). Leave the fish marinading in the lime juice for about 20mins, or, until you see it change colour. Bingo... Catfish cervichè! Absolutely freshest you can get. How it works is that the acidity of the limes chemically cooks the flesh of the fish. I do this with monkfish steaks from the local fishmongers. It works really well with super meaty fish.
