My omelettes used to stick too--I had a rubbish pan. You might want to invest in a scanpan, it's transformed my non-stick cooking. No need for oil or anything like that. Your apartment looks lovely and peaceful.

You need a new nonstick pan to make omelette. Get it hot add butter then add egg mixture. Cook till solid then fold over.

Re the omelette not enough oil, make sure the entire surface of the pan is greased, use a mix of butter and oil not too much now, low to medium heat, por on eggs and allow to set , turn pan and left set portions to allow loose egg to run , add toppings and fold allow to slide from pan, et viola 🤣🤣

In regards to the omlette , very hot pan with oil , plain whisked egg and then it starts cooking add the cheese and stuff and then rol The hot wide will cook the top. (Sorry I'm a chef , I do this daily ) ❤️❤️❤️
