Im Mexican-American and live in California but we go to Mexico all the time and I haven’t seen this version of burritos. I think this might be a Texas version. We usually let the tortilla get heated for a longer period of time because the way you had it seems raw. We also don’t put onion and peppers that way unless it’s in a stew. We usually don’t put rice but I’ve seen people do it. It’s usually refried beans and a stew or some sort of meat with guacamole,pico de Gallo and home made salsa. I find your version very interesting because I haven’t had it in Mexico so I don’t know how it’s Mexican. Maybe an interpretation then yes. My dad is from Sonora and my mom from Monterrey which is the north part of Mexico that has burritos and I have never seen this. I’ve only seen it in restaurants that claim to have Mexican food. I’m sorry if I’m coming across mean but for us food is so important and with all the videos on KZbin on how to get something authentic it really triggers me when I see this. I really enjoy your videos and I hope to see more of your family cooking together. 😊😊😊
