I used go alligator gar fishing with my dad when I was young. The best memories of my life with my daddy, he went to be with the Lord in 2000. Watching your video brought me so many memories, thank you so much ❤️

Even though I'm watching 2 yrs later DAM that was amazing and Very Cool. Lots of meat , that gar was like watching you hack through a tree. Dam that's a very hard shell skin . I’m a chef and have been preparing alligator gar for many years. The silver skin that you remove should not be thrown out but rather added to a large stockpot together with the bones and aromatics such as onions, carrots, celery, coriander or parsley. You can let it simmer for 24 hours, strain the stock and can in mason jars at 10 lbs. of pressure. This stock is very useful for all seafood dishes. It can also be used in soups and rice. This is a very strong and flavorful stock, a little goes a long way. Nice job breaking down the fish without damaging any of it.

You know, when I was younger I used to ask my father why we toss back alligator gar, since they're such huge fish. He always told me they're too much effort to clean. Now I see he wasn't kidding.

Your father was kinda lazy then because cleaning a deer takes about the same amount of time and effort and I've cleaned about 5 deer in one night before. And as for the taste, it tastes like tuna mixed with shark meat, an interesting taste, kinda like a steak. If you want to show your father what he's been missing then use an electric knife to remove the top shell spine and head and a very flexible filet knife for the meat. This guy admits he's still learning so that's why he's struggling a bit and he's explaining as he cuts so its taking him twice as long as it should. Cleaning a gar only takes 10-15 minutes. When you clean a fish, you are getting 60-80% of the fish's weight worth of meat. Alligator gars can get between 100-300 pounds so you were throwing back more meat than you probably weigh, which would be months worth of food, all because your father didn't want to do a little work. SMH

If you don't have the stomach to accept constructive criticism then you shouldn't have said anything. My statement still stands correct even if you take offense to it. 10 minutes or so is not a lot of work and it produces a lot of meat. This gar here was only about 150lbs and you saw how much meat he got out of it. The way you spoke, you hunt/fish for food, not fun. Differences in opinion are what make people individuals. Do you see me crying because I was insulted? No. Accept what's been said and just move on. The fact that people can't accept criticism is the reason we have huge threads of people arguing, which you are trying to start. Be wise, use your intelligence, and make today better than yesterday. Don't lower yourself to a hissy fit.

mate you had me stressing when you were swinging that cleaver towards your arm and sure enough you had the swing and miss and just missed ur arm lmao jesus you nearly died with the Gar this night hahaha my other fav part was the once sharp cleaver being hacked into stainless steel benchtop. Hey, my man, I've got a less physically arduous way of skinning those if you're interested in trying something different. Your method is clearly effective, but I've got another one I used to use when I worked in a taxidermy shop. Just get you a small knife, about as big as a pairing knife but tough enough to handle being worked a little hard, and start at the front, go under a scale and cut in a zig-zag pattern going up then down and you can get it open and started without having to seriously dull your big cleaver or risk slamming your knuckles into the scales. You can get all the way to the gill plate like that, and then you just skin him out as normal. Because we needed to hide the cut as much as possible, we cut down the middle of one side, but if you start the cut up high and then work around the "Corner" of their body where their semi-square shape turns you can get them open pretty easy and preserve your knives and fingers. I've had to skin so many of these things I could probably do it in my sleep. These fish in particular still haunt my dreams.

Man fantastic work. I grew up in El Paso. Came to the DFW area after college. Fishing here has been much fun. I’ve tried to catch a monster like this, but my fam taught me, not to kill an animal u less you gonna eat it. Ppl around me were just catching and leaving this fish to die and rot. its easier if you just cut it to pieces vertically by using a mallet and knife. its has big bone anyway so no need to fillet

If you’re a former cooking school student (as I am) you will have this exact train of thought, as You’re required to wear a cutting glove when working with sharp knives like this, especially when you’re cutting with the blade coming towards you.

This fish is called Pejelagarto in the South of Mexico and it is very common to fish in natural rivers, although it is currently grown more in nurseries for its high consumption, it is usually eaten roasted and accompanied by Amashito Chile sauce, and a very cold beer.

I am originally from the mountain west and had never heard of an alligator gar before. My dad took my fishing in Louisiana and I caught one of these but it was little one-footer. I thought it was the scariest thing i had ever seen. This video brings back good memories

I live in Arkansas and we catch and eat Gar too. Plus keep the Heads for Trofies also. You are teaching people how to live off the land and also showing them that they can get food from fishing from the waters and catch fish on there own insted of getting fish from the Store or Suppermakets. It's obvious you know what you're doing. The gar has a certain prehistoric quality like a sturgeon or a spoonbill. With a chef that knows what they're doing, I wish I had a chance to taste it

Have you had gator it surprisingly taste similar. NOT the dark meat that taste gamey and dirty but you need the dark meat to help the white meat flavor. Taste like fishy chicken is the best way I can explain it.

I tried it once -- the first one I caught, and my dad wanted to throw it back. I begged him to let us keep and clean it. It was so bony and tasted horrible. I spit out the only bite, and boy, did he get angry after all of that cleaning. I have never kept another one

I had a buddy catch one on a fishing trip and the guy we were with asked if he could keep my buddy's fish he was releasing and said he would make dinner with it for us. I had only heard my whole life, that your experience with the taste is what everyone always experiences. I waited starving for food knowing I was going to eat a bunch of the other fish and hog we had gotten that day have a bit of Gar to not be rude. Crazy thing is I called bullshit on that being the fish we caught because it tasted like Gator meat. He then explained if you eat the dark meat you won't eat any more of the meat. If you clean the fish and remove the dark meat then it tastes funny. The "secret" is to cook with the dark meat and only remove it after resting. Sorry for the chapter book of a comment!

@@B_Bodziak I don't know how similar the Spoonbill is to a Gar, but in Northern Kentucky near Cincinnati, Ohio, the Spoonbill's are farm-raised and their roe becomes a high quality caviar. I haven't had it but chefs and others in the know say it top quality and compares well to the more expensive Russian sturgeon caviar. Used to fish for Bass, Cropie, Sunfish and Perch as a kid and we cleaned it and fried it - pretty tasty.

Kaiser Of Panzers. For sure easier to cut up an ugly fish. First time in Hawaii that I saw a few beautiful Mahimahi fish laying dead. My first thought was ahhh, what a waste. Long, slender and an amazing turquoise color fish. I ate my first Mahi dinner and got over it. Main thing is respect for the animal and do what needs done. This man has that respect.

This brings back memories for me as a child. I would always go fishing with my great grandmother and several of her friends in the station wagon with the fishing poles strapped to the rooftop , we would catch the fish and bring them home so my great grandfather would clean them. As you was cleaning that fish I was smelling the odor of fishiness as if I was there with you as your cleaning. 😷😂

We have them in Texas , i was only 8 years old when my Grandfather and my Stepfather both cought a Catan ( Alligator Gar ) in a Resaca near our home . My stepfather had to use his 1957 Ford Pickup Truck to pull that fish out .😊
