This time, I have a Lotus Biscoff Cheesecake recipe for you.
Even if you're not a fan of cream cheese due to its tanginess...
Or if you haven't really tried Lotus Biscoff before...
This cake will capture your taste buds with the enchanting combination of cream cheese and Lotus Biscoff.
And when you package it up, it's so beautiful that it's perfect for gifting as well!
I also tried making an Oreo Chocolate Cheesecake using the same method, and it was equally delicious as the Lotus Biscoff Cheesecake.

Oven - Preheat for 15 minutes at 160ยฐC, then bake for 50 minutes
Air Fryer - Preheat for 5 minutes at 140ยฐC, then bake for 40 minutes

Cream Cheese 350g
Granulated Sugar 2/3 cup (100g)
Heavy Cream1 cup (150g)
Room Temperature Eggs 3 (150g)
A Pinch of Salt (1g)
Vanilla Extract 1 teaspoon (4g)
Lotus Cookies for the base, 15 pieces (120g)
Melted Butter 50g (6 tablespoons)
Lotus Cookies for decoration, 8 pieces
[ Oreo Chocolate Cheesecake ]
Cream Cheese 350g
Granulated Sugar 2/3 cup (100g)
Heavy Cream 1 cup (150g)
Cocoa Powder 2 tablespoons (15g)
Room Temperature Eggs 3 (150g)
A Pinch of Salt (1g)
Vanilla Extract 1 teaspoon (4g)
Oreo Cookies for the base, 15 pieces (30pieces) (120g)
(After removing the cream.)
Melted Butter 50g (6 tablespoons)
Oreo Cookies for decoration, 9 pieces
*Granulated sugar cannot be replaced with other alternatives.
*Whipping cream can be substituted with plain, unsweetened yogurt, but the texture may not be as smooth and creamy.
*Vanilla extract can be omitted.
Storage:
Can be refrigerated for up to 10 days.
(Best enjoyed within 4 days.)
For longer storage, freeze for up to 2 weeks.
*Baking Tips *
1. Use cream cheese, eggs, and whipping cream at slightly warm room temperature.
2. Crush the base Lotus cookies as finely as possible for the best results. This prevents cracking or breaking when removing the cake from the pan.
3. When mixing the ingredients, keep the spatula close to the bottom of the bowl and mix slowly. Over mixing can introduce too many air bubbles, leading to puffing or holes in the cake after baking.
