Would you also put a lemon peel in with the milk and cinnamon stick? because that's definitely what we would do in Portugal... I find vanilla to be too "sweet" as a flavour, but that's a personal preference, of course.

AHHH my favorite childhood dish!! I’m Spanish n I never thought I’d see any non-Spaniard, let alone vegan, make this online!! My friends never got how you could fry milk, hahaha. You should add grated lemon peel instead of vanilla! That’s what we do, it definitely adds a lot of flavor that balances out the sweetness, though I admit we enjoy that a lot. Mucho amor!! ❤️

Ohhhhh, looks good!!! Now I’m hungry. I recently found out that there’s a vegan milo on the go in Aus. I’m going to spend a few years there so looking forward to tasting it and hopefully get to taste some of the wonderful vegan food you’ve munched on the channel. Also for all the Vietnamese coffee lovers like myself there’s going to be a vegan condensed milk coming out in a few months!!! Love the video as always ☺️

I think it would be a LOT better with less sugar. 100grams is a lot considering it's 500ml of milk, and a lot of soy milks already contain sugar. I would actually just use a bit of stevia, a sprinkle of salt and vanilla extract or vanilla pods, and I personally don't like chickpea flavour so I'd opt for a different flour.

does the cornstarch keep it from curdling or does it just thicken it? I am brainstorming healthier ideas for that thick milk (cream).

nothing keeps it from curdling except not boiling! - corn starch helps to thicken, you can probably substitute with tapioca starch or potato starch but cornstarch is old reliable. There are some versions I've seen with coconut sugar but it doesn't set as well!
