My very first butter scotch was given to me by a sweet lil ole lady in church. I was 6 and she was about 75 but she became my best friend at church. I made a b line for the butter scotch lady every Sunday!

You can substitute 3/4 cup of swerve brown sugar substitute for Brown sugar. It doesn't effect my blood sugar at all.

In my childhood home, my Mother made Sunday pie. (Butterscotch pie) It is to die for! Her recipe is almost like yours except she BURNS 2 Tbs white sugar. Then adds a small amount of water. Add this to the pudding. You will be surprised how much better that makes it! If you try it, be sure to let me know.

I bring the whipped cream to the edge, otherwise that tough film will develop on the exposed part. I also stir 1 cup of butterscotch chips into the pudding, after it comes off of the heat, for more flavor.

Was it teflon or just some metal? Either way... She would have been better off mixing things in a DEEP bowl in advance! Quicker...less chance to spill out, and even cook the filling in a 4-6" deep pan where she could have mixed things up much better.

Not only watching, but hearing the scraping sound. Sounds as bad as Rosanne Barr squawking away, maybe worse. Someone should tell her that Teflon is not meant for human consumption and they make plastic whisks as well as bamboo. She says to remove it from the heat before adding the vanilla, then ads it to the bubbling mess while still on the burner and turns off the heat after she adds it. She can't even spread the topping out evenly.

Hey Troy as a matter-of-fact one time I made banana pudding with Jell-O instant butterscotch pudding. But I also added some Cool Whip to it and made it butterscotch fluffy and then layered the bananas and vanilla wafers OMG you talked about so Heavenly delicious try it and let me know if you like it! If you need the recipe I can get that to you just let me know

Why not just put the cooled liquid butterscotch filling straight onto the pie crust and into the refrigerator and chill it once...? Seems it would settle and adhere better to the crust and omits a step.

My mom tried the thing where you put the plastic wrap over the custard so it wouldn't form a skin, it still formed the skin, so that doesn't work, at least it didn't for her.

Did she make contact with the custard? It's practically foolproof unless she let it cool long enough before putting the cling wrap on it so that skin had already begun to form. She should probably give it another go. Personally, I just don't bother. I just pour it into an airtight container then when you dish it out just mix it so it reabsorbs some liquid. It'll stiffen in the pie crust anyway.

Yeah, you have to push the plastic down on top of the pudding so it makes full contact. We generally don't do this becausd the pie doesn't end up lasting long enough to end up in the fridge.

Yes, Theresa reminded Paula to tell us viewers to use a pie crust that you have already pricked and baked, because once the butterscotch custard is poured into the pie crust, there is no more cooking at all.

@Morgan Calvi: Yes at the beginning of the video it shows her mixing the flour, sugar and other dry ingredients in the skillet and then adding the cream and egg yokes and cooking it all together.

I was asking a question in general about why diabetics are supposed to eat a half at a time. I asked, 'How come diabetics aren't supposed to eat more than half a banana at the time? Is it the sugar and carbs in them?'...not one word of that sentence has to do with how she eats bananas 🙄. Jeesh...snippy people.
