Paula, take the lid off the pot because the condensation inside the pot with the lid on it will prevent the onions from browning! That's what I do. Also, if you want them to brown don't add salt until they are finished! Just some tips! Butter, yes and butter!

Looks fantastic....nice to see Eddie in FRONT of the camera for a change.....hey Paula....I love FO soup and I make it with several different types of onions...I use a Vidalia, yellow, white, red, Spanish, leek and green onions....and I use white vermouth to deglaze and finish it with dry sherry......hugely delicious!! Of course, homemade beef stock is also important as is the crouton and cheese on top like you did.....since it's so cold in PA, I think I'll make some this week!! Great video!!!

WOW! I woke up this morning thinking, I would love some good French Onion Soup, I wonder if Paula has a good recipe for it? Search it and you just posted today!!! I love it! Making it now! I would love to share a recipe with you!! Chicken with a Mushroom Cream Sauce *2 Chicken breast cut into two halves (lengthwise) to make 4 total flat(ish) pieces (I soak this in 6 cups of water and ½ cup of salt in the fridge for at least an hour before) *1 container of button mushrooms sliced to your desired thickness (Don’t go too thin on these, they shrink!) *1/3 white cooking wine (a good, sweet white will work in a pinch!) *1 cup of heavy cream *1 tbsp butter (that will equal 2 to Paula!) *1/2 Red onion diced *2 tbsp olive oil *salt and pepper to taste *Remove your brined chicken from the fridge, give it a rinse (rinch as Paula’s grandma would say) and pat dry with paper towel. Salt and pepper both sides. *Coat a saucepan with the olive oil. Over a medium to medium-high heat. *cook chicken about 4-5 minutes per side until lightly browned and cooked through *remove chicken from the pan and set aside to rest. *in the same pan turn the heat to a medium high heat, put your butter, your sliced mushrooms, and diced red onions. *cook the mushrooms and onions until they begin to soften, and the butter is almost evaporated. *add 1/3 cup of white wine. Cook until evaporated. *turn your heat down to low to low-medium and add your cream to the pan with your mushrooms and onions. Cook until it is bubbly and thick. It will take on a light brown color no more than 2 ½ - 3 minutes *serve your chicken with a healthy serving if the mushroom sauce on top and enjoy! If you have any questions! I made French onion soup for 20 people I used big bag of onions from Sams 25 or 30 lbs I sliced them on a meat slicer. I put them in my pressure cooker and batches for 15 mins and then seared them off to get them caramelized. Using the meat slicer was the saving Grace because I got them just the right uniformed size. I didn’t add the meat but everything else. Thank You ok, I added 2 cups of wine white to the pressure cooking part.

TIP: To caramelize onions SUPER FAST (in UNDER 30 minutes). Use any low pan (nothing that has a high edge). Cut your onions as Paula did in this video. I use 3 pounds of Vidalia onions when I make mine. Put your onions into your pan. Add 2 tablespoons of vegetable oil, 2 teaspoons of kosher salt (NOT regular table salt that is iodized), and add 3/4 cup of water. Turn your heat up to HIGH and bring the water to a boil. As soon as you see a lot of steam come up through the onions cover them with your lid and cook about 10 minutes or until most of the water has evaporated. Remove lid. NOW HERE'S THE TRICK ... Press the onions down flat to the bottom of your pan and just up around onto the sides of your pan. Let cook without stirring for 30 seconds. Stir them after 30 seconds, scraping up the fond (the brown sticky bits on the bottom) as you stir, and again, press them again back down flat and into the sides of your pan. Do this every 30 seconds, until they become well browned, soft and slightly sticky. It should take no more than 15 to 20 minutes. THE SECRET INGREDIENT: In a small bowl stir together 1/8 teaspoon of baking soda and 1 tablespoon of water. Stir this mixture into your pan with the onions and slowly stir together until water evaporates. --- The pH environments in the baking soda will cause the onions to brown more readily. After the baking soda water evaporates - you're done... In UNDER 30 MINUTES. Yes I love chemistry... but not more than I love Miss Paula. :) I learned this trick in the 1970's and have always used it to make French Onion Soup and Caramelized Onions for my meats and onion gravy recipes. It's a game changer for all cooks. --- Love and best dishes.

Let me say that I love you & I love French onion soup. I will forgive you for using Fillet Mignon for soup. Stew beef, London broil, chuck, a good size stew bone, okay. This is French peasant food. I learned the recipe from my great grandmother. Now we grandmas can teach our grandchildren. 😋

You got it right about the butter instead of the olive oil...it gets those onions caramelized a whole lot faster.

Love French onion soup. I use 3 white onions for 4 servings, and it takes about an hour to caramelize on medium heat. Gotta be careful though, once they start to caramelize they can burn quick!

french onion soup in my opinion needs Whorceshter (sp) makes all the difference, and sometimes l add a splash of brandy, always make a huge pot, cause it freezes up well and my wife likes her soup on a dingy day, definitly going to tell her to try the beef in it the next tme, sounds and looks good , thanks Paula

Those look like cat head onions! Wow they're so big. I used to make French onion soup when I was first married. I never thought about adding meat to it. 😃 Of course when you're first married you can't afford meat. Nice job Paula, and good to see Eddie in front of the camera for a change. Good work Michael! I am French and no, French people don't always like stinky cheeses. I personally hate it but it is true that the most famous French cheeses (roquefort, camembert etc.) are made with raw milk, which gives cheese a more pungent flavor. Adding beef is a great idea though, I love your rendition of this French country favorite!

Paula said she and Michael knew they would eventually downsize. Paula finally sold her 14,500 sq. ft. waterfront mansion (it had been on the market for several years), and are moving into Paula's smaller house which is being remodeled (the one where her Food Network show was taped). They are staying in Bobby's guesthouse until the renovations are complete.
