It’s so easy with an immersion (stick) blender. Dump it all in the cup and about a minute later, you have Mayo. I use the home made for things like chicken or potato salad, to dip artichoke leaves, to make garlic or pesto aoli- but nothing beats Duke’s for potato salad!

I want to make my own mayo Miss Paula!!! I have to get an inversion blender. Its funny, I was just telling my daughter I want to make my own. I can't think of anyone I would rather have teach me how to make it than you my dear.

When I was a kid mama always made our mayonnaise. She also made bread twice a week and there was never a "box mix" or anything of the kind in the house. She kept this up into her 70's and continued to cook "3 squares" a day until she passed at 84.

Real home cooks know we have a lot of trial and errors. This is how it really goes in the kitchen. This was so much fun to watch. They finally succeeded. This is true reality. I have had many flops over the years before success. I truly enjoyed this. Thanks Paula and Bubbles.

The electronic part that is used to regulate speed in these mixers is called a "resistor", and that can and does generate heat; if the mixer is getting excessively hot, then something is wrong, perhaps it is the resistor that is overheating. It often is not the fault of the person who restored the machine, as he could have used great parts, and just got a bad one that slipped through quality control of the resistor's manufacturer. Take it back to him, and tell him the problem, and have him look into it. I personally would not try using it again if it continues to overheat, as that could seriously damage other motor components. Also too, some of these mixers use what is called a capacitor (the old term that they used way back was "condenser"). These capacitors can also go bad and require replacement,.

Love it when you two are in the kitchen together! Longtime friendships are such fun! I make my own mayo in a quart jar and use an immersion blender. It's done in under 30 seconds.

Love mayonnaise and the mixer! It's a late 50's/early 60's model. They often came in different colors (yellow, turquoise, pink). The high pitched squeaking sounds like it either a bearing is worn out and/or it needs a good oiling. It can definitely be fixed. The nice thing about the old machines is if they're maintenance, they'll go forever.

Whenever I make mayo, I use a large squirt bottle for the oil. Less dripping and easier cleanup.

Hi Paula and Bubbles! That Mixmaster is a model 12 made from 1957-1967 and I have my Aunt Mildred's. It is normal for it to get hot but it needs to be oiled regularly (regular sewing machine oil). There are 3 holes and another spot; one hole just in front of the mixfinder dial, one hole on the side of the mixer that does not say Sunbeam just next to he handel. Now, pull the handle down (like to eject beaters) and you will see another hole just under where the handle was. Last, there is a hub next to the handel in the up position (for the juicer). Inside that hub there is a thing that spins. Oil goes between the hub and the thing that spins. Just one or 2 drops in each spot. I guarantee the man who serviced it did not know or he would not have made a comment on it's longevity. If Bubbles oils it every few months it will last forever!! Great job with the Mayo. Paula, I have been watching you since the 80's? I believe. I think you are wonderful and thanks for all the great recipes!

You are absolutely right! Margarine is one element away from plastic. Flies won't even land on it!

You are so right. Also, canola oil is not as healthy as sunflower, because of the transfats that are made in the manufacturing process.

1965 was the year after I got married! After you have tasted homemade mayonnaise, store bought just doesn't cut it! I always found that a blender was ideal for making mayonnaise. Put the oil into a squeeze bottle, so easy to dribble in a steady stream. My tips, worked out over many years. Good cooking!

immersion blender works best I find! I do the eggs and seasoning than while the blender still in pour oil so it’s on top of eggs than blend again and wa’la Mayo!

Just made this recipe it is really good, I only had crisco canola oil and it turned out perfectly. I used a hand mixer and incorporated the oil very slowly about 5 minutes to make sure it didn't separate and I was 1/4 cup short on the oil but it came out perfectly.

Paula, OH THE MEMORIES seeing that Sunbeam mixer in use. My mom had one and it was a work horse. I still have the same mixing bowl you used. She passed away 30 years ago but watching you both use that mixer brought back some good times in the Kitchen. Thank you Paula and bubbles. Yes I will try making some mayonnaise now. God Bless you

I've never had dukes I live in California where u can't hardly get white lilly flour its expensive to buy n cant get king author either or southern biscuit mix or white lilly corn meal ugh when ur raised by Southern ppl that moved to California b 4 u were born u grow up with dif recipes its frustrating but what does dukes taste like ? I normally buy best foods

My grandma and father came from Belgium and Grandma taught my mom how to make homemade mayonnaise early in their marriage (Lol). So often I would see my mother sitting in the living room, stirring furiously and adding drops of oil a little at a time. She flavored it with lemon instead of vinegar. I always wondered how that nasty white stuff in a jar could be the same as the heavenly yellow stuff. But I don't think the homemade would work in potato or pea salad.

This was so much fun! I have two family heirloom Sunbeam Mixmasters that are older than this one, still in working order. One belonged to my great-great aunt, and she ALWAYS mixed the flour into her cookies by hand after using the Mixmaster to cream the shortening and sugar just because her mixer got hot too.

This is so odd. I have never made mayo. Never wanted to until the past week I decided I want to make my own and use the oil I prefer which is light tasting olive oil. I wasn't sure which recipe is a trusted one and lo and behold Paula posts a video on how to make mayo. :0

Olive oil is the healthiest oik yo use as it does not have transfats. Margarine is full of them!

I keep it no longer than about 5 days. Never make more than you need for the dish you are making. That recipe they are making is an ideal quantity.

LOL. So funny 😆 Many cooks can relate to this… me included!! With a hand or stand mixer I was taught to start off with just “drops” of oil from a spoon. As it thickens slowly increase amounts after the emulsion forms & thickens. Honestly, a Bamix immersion/stick blender makes this so much easier. Mixers, standard blenders and food processors all have their challenges to master when making Mayo. When doing homemade I like the taste of using equal parts vinegar and lemon juice for basic Mayo. Tarragon vinegar makes a good Mayo as well. The old heavy duty Mixmaster was well made. I wish they would revive it. It was THE mixer to have for SO MANY years in America.

Miss Paula, you were on the right track!! Need a stick or immersion blender and a tall 1 1/2 wide mouth pint or quart mason jar or one the stick blender fits into. In the jar, crack your room temperature egg (whole), zest your lemon and juice half of it into the jar followed by a pinch of salt and paprika. Now add a cup of your favorite oil (except olive). Insert your stick blender into the jar and place over the egg. Pulse it on then tilt it to blend in the rest of the ingredients then raise and lower a few times til it’s nice and thick! Voila mayonnaise!! Just put a lid on it and refrigerate it!! If you’re a fan of Duke’s, exchange the lemon zest for 1 tbspn and 1 tspn of distilled white vinegar and 2 tspns of apple cider vinegar, 1/2 - 3/4 tspns of salt and 2 pinches of regular paprika! Follow the same steps with the immersion blender and enjoy!!

Love home made Mayo! I use pasteurized eggs and yummy oil and lemon juice.nice n thick it has to be!problem: u are not pouring a thin-enough stream! Hold it higher and stop hitting the spout from the bowel.I use a blender.

I make homemade Mayo for my daughter who has a soy/corn allergy. So easy to make with an immersion blender!

@@biggs1303 the whole egg with canola oil, salt, pepper, red wine vinegar, and ground mustard. I don’t do room temp. It whips up in about 20 seconds.

In Illinois my great Aunt used to make sour cream by beating cottage cheese. I’m not sure if she added anything else. She was a wonderful lady and a great cook.

Hi Paula, I have an idea for a video that many people would enjoy. My mother worked in the China department of a department store for many years, the store gave employees discounts and sale prices on top of that so she has several pieces of silver plate dishes, tea sets, trays, punch bowls, covered dishes, chafing dishes and flatware, it’s so sad that she never used them because she thought they would be hard to clean them and she didn’t want to ruin it. My mother passed a few years ago so I now have it, but I haven’t a clue how to use it, do I use a paper doily on the trays to protect them? Or do you serve right on the tray and what would I serve on them? I have two large SP bowls about 10 inches across and 3 inches deep what are they for, or do you have any ideas how I could use them, what might I serve in them? I have a Pyrex style glass baking dish about two and a half inches deep and sits in a SP tray that has legs that sets on the dining room table, I also have an oval glass and SP tray with legs but this one is more flat than the other one about 3/4 of an inch and once again I have no idea what it’s for or how to use it. Paula I know you and others might be rolling your eyes in disbelief but that’s ok, I truly haven’t a clue and need help, my mother bought all of these beautiful things and never used them, I’m wondering if she never used them because she was embarrassed that she didn’t know how. Sorry to post again. I have heard that canola oil is often from GMO and that is why it isn’t recommended. I am not an expert but that is what I read.
