I have no idea. I make my roux by color and not time. LOL

Roux for etoufee should cook at a minimum of 3 hours. Supposed to look like coffee with a bit of cream. Most folks will cook it 10 to 12 hours until it looks like coffee without the cream. Add a lot more seasonings to my etoufee though and no celery. Gotta have some cayenne, worcestershire, soy sauce, extra-extra-extra creole seasonings and blackening seasonings, old bay, black pepper, red pepper flakes, smoked paprika, minced garlic, onion, bell peppers, a good white wine, shrimp/seafood stock or vegetable stock, loads of shrimp and some fresh finely chopped parsley added in with the shrimp. With the soy and worcestershire you'll have to be very careful about adding salt. Use a good white wine you wouldn't mind drinking, and go ahead and get a few bottles and have a few glasses cause this is a low and slow process until you get to where you add the shrimp, then it goes real quick. Unless making chicken etoufee you should use a stock you saved from boiling shrimp or you can save the shrimp peels, freeze them and collect enough to make your stock with instead of using a chicken stock. I make this in a big batch that will serve a good sized crowd, but for just a few folks you can reserve enough to serve them and freeze the rest and add your shrimp and parsley later. Haven't made this in a good while and get the feeling I add more spices and herbs than what I listed, will edit comment if I find more on the recipe card.

Roux can be peanut butter to coffee colored…I’ve never cooked a roux for 3 hours…..but you have to keep stirring😉when I was about 10 or 11,my Daddy put me at the stove, on a stool, the black iron skillet was up there, oil and flour in it…..he put a brown bottle of Crisco oil in the center of the stove top, told me to keep stirring until it was that color….we were making gumbo. A fricasse (stew), would have just a shade lighter brown, and more flour than a gumbo roux…..Shrimp stew is thick roux gravy over rice….and a potato salad(not a diet meal) that’s my favorite. And southwest Louisiana has more brown gravy, New Orleans area has more red (tomato) it just depends which side of the state you’re on💕

I'm so glad you had this guy on here! The first time I went to New Orleans back in my early twenties I had Shrimp Etouffee & I fell in love w/that dish! I've been wanting the recipe for it since but didn't want it from just anybody. I wanted it from someone who had lived most their life growing up in New Orleans fixing it & eating themselves. That way I was guaranteed to get the real deal if you know what I mean. It's taken 28yrs to come across somebody like that but I'm glad I found it, here on your show Paula, thanks again.

Emeril Lagasse has a shrimp etoufee recipe, very similar to this one. Emeril has lived in New Orleans for years.

That looks delicious. JD has a country singer Trace Adkins voice. Love to hear him talk. Michael had the hard job. I had peeling and deveining shrimps. I buy mine already done. I do love shrimp though. JD looks a fun kind of guy. Yall enjoy that lovely meal. Love and Best dishes

I haven’t made shrimp étouffée in a very long time. I am now inspired to make it again. I used to make crawfish étouffée as well. I will be making this very soon and invite friends. Yum Yum!

Overall a really pleasant video. JD is a nice southern gentleman. Pretty wife and mother-in-law. Fun seeing Paula and Michael being sous chefs. Nice camerawork with the panning around the kitchen. Cozy fire in the background when it became nighttime.

Sound has an echo chamber quality -- don't know if it is due to JD's bass voice? Seems like everyone is talking at the same time. Otherwise, recipe looks yummy.

The other pan was just a cooked cream corn as a side dish. It doesn't have anything to do w/the Shrimp Etouffee other than that is the side dish he chose to make.

That roux is totally unnecessary. A can of cream of chicken or cream of mushroom, golden mushroom soup will do the same thing without all the time stirring.

Sorry this is not an etouffee. Etouffee means smothered in french he ain't smothered nothing. I wouldn't eat it. I've never cook shrimp but I cooked crawfish and it would make you slap everybody.
