I've made the Emeril Lagasse version of this several times. Although, I haven't made it in a long time. I'll steep the shells in water to make a kind of broth to go with the seafood broth/stock. I need to make it again if I find a good deal on shrimp.

I’m ticked cuz of the way he says andouille lol. It’s not “an” as in anne. It’s more of like “ahn” as in James Caan. It’s a subtle thing but it’s like nails on a chalkboard for locals lol. Try going to Louisville, KY and “Lewis-ville” instead of lew-uh-vul and you’ll be told real quick lol.

I’m from south Louisiana, born and raised 10 generations deep, I have all my family recipes passed down through the generations plus I’m a chef and food historian specializing in south Louisiana cuisine so my credentials on this topic should hold weight and I have to say something here…but please don’t take this to offense it’s just advice for the sake of authenticity, you can always do what you prefer: I will begin by saying there is absolutely no tomatoes in a traditional étouffée. Not in a crawfish étouffée, not in a shrimp étouffée. Also, there is no andouille or any other kinds of sausage or meat in an étouffée, it’s only the seafood and usually of one type. Once you add tomatoes and andouille or any other sausage or meats along with a roux, you’ve made a sauce piquante rather than an étouffée. I’d classify this dish in the video as a shrimp and andouille sauce piquante because it combines shrimp (seafood), andouille (meat), a roux, tomato products and spice. The roux for étouffée should be light. It should be a medium brown roux, which is a peanut butter color. Some folks use a blond roux too. The roux in this video was acceptable as traditional. Light peanut butter or dark peanut butter color is ok. This part of the dish was fine. You might see some folks adding tomato sauce to crawfish étouffée, but that’s because they don’t know how to get the reddish-orange color in a crawfish étouffée and have no idea that tomato is not part of an étouffée. But I can assure you there are no tomatoes in a traditional étouffée. The reddish orange color in a crawfish étouffée comes from the red on the backs of the crawfish tails and the yellow of the crawfish fat rubbing off and mixing with the peanut butter colored roux and added butter because the crawfish must be smothered down and made into gravy. A shrimp étouffée is supposed to be brown, it’s not supposed to have a reddish orange color. That’s because shrimp don’t have red on their backs like crawfish so there is nothing to tint the gravy reddish-orange. Anyone that’s adding tomatoes to a shrimp étouffée is trying to mimic the color of a crawfish étouffée (which is the original étouffée) but is unaware that shrimp étouffée is brown and the only one that is reddish-orange is a crawfish étouffée. Étouffée is basically an all seafood fricassée usually using one type of seafood (fricassée in Louisiana is a term reserved for a brown stew made with a roux and made with meats like chicken for example) and a fricassée doesn’t have any tomato in it either so that’s why I made the comparison. It’s characteristic is to be brown from browned meats. The only dishes that have tomato in them that are south Louisiana stews/soups are sauce piquante (roux, tomato and any meat or seafood), courtbouillon (roux, tomato and fish), créole (tomato and seafood or meat, no roux), turtle soup (roux, tomato, turtle, sherry, boiled egg), bouillabaisse (tomato, wine or beer, fish and shrimp, but may also contain blue crab, blue crab crabmeat and/or oyster), caldo isleño (tomato product used in a soup of pork, various vegetables and beans) and a traditional New Orleans style seafood gumbo (gumbos in the New Orleans area may or may not have tomato, but a traditional seafood gumbo usually does. Gumbos in the New Orleans area can contain seafood or meats or both and may contain okra or filé, but usually contain a roux). Thanks for reading this long comment ⚜️
