That looks SCRUMPTIOUS! I will not let this week end without cooking up a mess of oxtails and feasting on them! They are my very favorite beef. The price has skyrocketed in the past few years. I used to pay $2.99 a lb at an Asian supermarket, now they're $11+ lb at the grocery store. Pro tip, Costco usually has them for $8.99 lb in 5 lb pkg. Well worth the splurge! My favorite way to cook them is to braise them in red wine with shallots, garlic, herbs, a little tomato paste and chicken stock (chicken, not beef stock) for about 3 hours. This creates a rich, thick, luscious sauce and the meat is so tender & succulent. Get you some!

So T Dub, chicken stock is the trick?☺️I'm gonna try it 😃

Miss Paula, try beef broth instead of water and can add beefy/ onion soup mix as well. Such wonderful flavors instead of plain water to cover oxtails. I do my oxtails low and slow on the stove top. So so delicious
@CrenShaw19502 жыл бұрын
Penny Roach, you are sooooooo right. I also use low sodium or unsalted chicken broth. . . Anything except plain water. Also, I cook mine in the oven, that really concentrate the flavor.

When I was a kid we used oxtails to make vegetable soup....woohoo tasty. It was a very inexpensive meal or two for large families. Now just like beets, they have been reclaimed by fine diners.
@haydeefm74142 жыл бұрын
In Cuba we use a pressure cooker as well, but pour a sofrito of onions, green bell peppers and garlic sauteed in olive oil over the oxtail. We then add olives, potatoes, Sherry wine (no water) and a little broth (if needed). We eat over Jasmin Rice with fried plantains. . . .

This is looks so good! My grandma made these in a soup and they were delicious. Back then they were a cheaper cut to buy at the grocer. You are right Paula, now they are $14.99 a pound at Kroger!!! I will definitely try this recipe when I can afford it LOL - love you Paula - Happy Fathers Day Michael.

Paula, I use oxtail with beef bones to make the best French Onion soup! I use my slow cooker. Thicken the soup to your liking and add sauteed onions, scallions, and leeks (if you like). I leave the fat on, let the broth cool overnight, fat comes to the top and comes off in one layer. Make my own "croutons" out of leftover bread with fresh mozzy cheese and parmesan. It's the bomb. You should try it. The bones go to my doggies for a treat!

Oxtails are my husbands favorite meat, which used to be cheap eats, but not anymore. I season them, brown them, braise them in the oven until they nearly fall off the bone, then apply bbq sauce and put back in the oven for about 20 minutes. My mother-in-law used to cook them in the oven, covered in tomato sauce and onion and seasonings.

We season and braise them like beef stew with carrots, celery, mushrooms, onions, and wine. Sometimes tomatoes. And then serve over mashed potatoes, polenta, or rice. Used to be the budget meal, now its gourmet thing.

I had a boyfriend back in the 70's who's aging Grandma was fond of oxtail soup. She lived with them & since no oxtails we're to be found (this was the 70's, after all) his mom found a package of some kind of soup base & grandma was thrilled. 👍

Oxtails are so delicious! In the past I would make them every New Year's Day, as well as making them during the year periodically. Unfortunately, oxtails have gotten way too expensive for me to buy them these days, at $16.99 per pound! Shocking and disappointing. If the price comes down, I will surely make them again.
