The most flavorful oxtails you'll ever make. Watch and learn. The main secret to this recipe is the Goya Adobo All Purpose Seasoning🤫Don't tell anybody 😉 All ingredients used are listed below. Cooking Time: 4-5 Hrs
All Ingredients used:
➡️ ​2-3 lbs oxtails
➡️ 3 tbsp Apple Cider Vinegar
➡️ 2/3 medium onion blended - chop remaining onion into bite size pieces
➡️ 4 large bell peppers(all colors), 1/3 blended - 2/3 chopped into bite size pieces
➡️ a few pieces of ginger... just a few
➡️ 2-3 tbsp minced garlic
➡️ 1/2 cup fresh parsley - a few extra sprigs for blending
➡️ 1/2 cup fresh cilantro - a few extra sprigs for blending
➡️ 1 large tomato chopped
➡️ 2 tbsp of worcestershire sauce
➡️ 2 big pinches of salt and pepper
➡️ 1 1/2 packs of Sazon Goya seasoning
➡️ 1 tbsp parsley flakes
➡️ 1 tbsp oregano
➡️ 1 tbsp cilantro flakes
➡️ 2 tbsp Goya Adobo All Purpose Seasoning
➡️ 1 tbsp thyme
➡️ 1-2 tbsp garlic powder
➡️ 1/2 cup brown sugar
➡️ Avocado oil or oil of your choice
➡️ 1- 1 1/2 tbsp tomato paste
➡️ 1 tbsp ketchup

I grew up for a few years just down the street from an old fashioned black couple named rufus and esther. They were the type to welcome anyone who was hungry to their table if you got out back and helped in the garden a bit. We was always broke, so I helped in their garden quite a bit, and ate with them quite a bit. They'd always call me their adopted white grandson. Sad to say they've both passed away, but on to my point, mrs.Esther could cook. She always made some great oxtail, or neck bones either way. She would use the broth she'd have left and either use it in some pintos or a pot of greens. This was a trip back in time for me, thank you for making this video.

I used this recipe and it was my first time cooking oxtails...my husband loves oxtails and I have always been hesitant to make them as it is a dish that must be prepared correctly or it can be disastrous. He absolutely loved the flavor and appreciated the fact that the oxtails were well-seasoned but not too spicy. He is a chef and said that this was an excellent recipe that I will use again. I’ve tried your recipe, at first I was not sure how it was going to taste because I was not familiar with the aroma from the blended ingredients. But when my wife and I first ate it they were sooo delicious. The next day they were even more better, because the sauce thickened over night. Your recipe has been added to my culinary collection. In South Africa as a social occasion, we cook a stew outdoors in 3 legged ironware pots, over a charcoal open fire. It’s called a “potjie” and oxtail is one of the more favored ingredients. I’m definitely going to give this a try, it seems like it’ll be a nice twist on our traditional recipes. Looks amazing. Thank you

That's the way oxtail is cooked in the leeward Islands.. We burn the sugar and add the meat along with all the other ingredients then we add liquid and seasonings...

This recipe looks really tasty and I am definitely going to try it. It’s funny how all people believe that their country is an originator of certain dishes. I am of Mexican descent and I grew up with oxtail soup. It’s a traditional dish. I live in Hawaii and Hawaiians have a traditional oxtail soup as well. There’s lots of various Asians here with their oxtail soups at restaurants and filipinos they believe they’re the originators of putting oxtails in soup form. My Filipino friend assured me. :) Point is we all make use of animal body parts and same ingredients, a little differently from country to country and people to people, and that is such a wonderful thing. Lots of deliciousness to explore!

Lime or lemon juice tomato sauce cuts all that grease out flavor fully withouth dryiing out your meat i cant wait to try your recipe its in my brain i love oxtails better than most steaks

@@jayholla31 That's so true! I've been really wanting to try to make ox tails using a recipe. So I looked into the prices in my area. It's not easy to find. Plus it's as costly as filet mignon! Couldn't find any thru the holidays. But my butcher called me yesterday...he has them in. So I get to finally cook and eat ox tails. I haven't decided which recipe yet.🤷🏽‍♀️👩🏽‍🍳

Same here honey in Alabama. I ask some of my Alabama native and they be like ox tails....I be like you mean to tell me u r from the South and your parents have never cooked oxtails. U kidding me or some dont like them. Hell every Saturday that was my meal. I thought all of us black folk ate ox tails. Even my husband said he didnt eat oxtail which I dont believe his behind at all because his mom said she cooked them lol

It amazes me how much a supermarket charges for oxtails. They used to give them away for free because no one wanted them, just like soup bones. I love the way you did your video, no talking just to talk, music not too loud, and you said worcheshire just like we do in NC. Can't wait to make this!

The grocery store we go to has oxtail but very pricey, I can never figure out why.. I have to start trying to venture out to other grocery stores I guess.

@@sezell6677 @Maria Loftin when chefs discovered it and started putting the meat in highend restaurants the price increased. When the purpose was that of passing off the unwanted parts of meat to po'folk it was cheap, when "other" discovered it, then it became a commodity.

Totally agree with you. I used to buy oxtail, plantains, tripe, you name it for a dime a dozen here in the SF Bay Area. Not anymore. Our foods are going mainstream and the grocery stores are cashing in.

@@tierra3200 Hey 😊 Where the spice mix and dry herbs are used I replaced it with 4-6tbsp of a Jerk style dry rub I make. Can't remember where I got the original recipe from but it's as follows... 2tbsp Onion Powder 2tbsp Garlic Powder 4tsp Cayenne Pepper 4tsp Smoked Paprika 4tsp Salt 2tsp Allspice 2tsp Ground Black Pepper 1tsp Chilli Flakes 1tsp Ground Cumin 1tsp Ground Nutmeg 1tsp Ground Cinnamon 2tbsp Dried Parsley 2tsp Dried Thyme 2tbsp Brown Sugar So good on chicken and pork ribs too 👌

I measure when I bake cakes and stuff otherwise you can screw up the chemistry of it but for regular savory cooking, just taste as ya go!

True, day! I think the best compliments is my da (Happy Birthday). He would always say girl ,(you put your foot in that) you cook like your mama. One reason I was able to cook that down home food. I always put as much garlic as I think I need - and then I add more! Garlic is one of God's gifts to taste buds! I have never used the jar stuff. I usually buy huge nets to hang up in my kitchen

@@HeyitsBri_ I usually buy them by the kilo from farmer's markets and buy the mesh hanging nets separately. I hang my onions too. Add to this I also grow herbs in my kitchen.

The one tthing I've noticed when using jarred minced garlic is this. One has to use a lot more than versus freshly minced garlic. It has lost most of its potency in both flavor and aroma.

Outstanding recipe, you nailed it. I followed your instructions and these oxtails flavor and tenderness beat out restaurant purchased oxtails. Paired very good with white rice due to the amazing flavor of the oxtail gravy.

That recipe was amazing! After prepping the ingredients and browning the meat yesterday evening, everything went into the slow cooker at 8:30 pm. 2:30 am Sunday morning, dinner was done and the kitchen was smelling delicious! Placed over some dirty rice along with some corn muffins.... talking about bone sucking, finger licking good...wow! I am going to look forward to more of your recipes!

I used your recipe to make ox tails for dinner today. I used my slow cooker. I put them to cook last night at 8 p.m., i set the temperature on high. When I left to work this morning at 5:30 a.m. I changed the temperature to low. The meat is falling of the bone. I changed a few ingredients from your recipe based on what I have used before. Mind you I just started cooking over a year ago. I used beef broth instead of water, I used fresh thyme instead and I floured the ox tails before I browned them. Your recipe has been the best one I have used so far. Thank you for your video and clear instructions. I will use your recipe for years to come. Wishing you the best.

I enjoyed the way you cleaned the meat. That's how my mama taught me to wash, and sanitized all kinds of meats with vinegar lemons or limes. Great job. It looks delicious.

I learned about adobo some years ago from some Latino friends and promptly added it to my soul food recipes. There's nothing like it and the right colored wine to bring out the flavors in meats and seafood.

Great to see you wash your meat before cooking; and the way you prepared it, so clean and tidy, all credit to you. My mother taught me too, to brown sugar in a touch of oil, first, then add the meat or chicken, for a nice stew. Your cooking ingredients are similar to what I add, when cooking oxtail, lovely!

Loved the recipe! It looked delish. In my culture, we are extra with cleaning and we are conscious about too much fat on meat. To help you with fat-put in a pot of boiling water first for a few minutes, then drain. In my culture, this helps to soften the thick fatty pieces and we remove them. It will won’t affect any other steps you followed. Might I suggest limes for the cleaning? Cut them up and use to scrub the oxtails really well to get rid of the grime after they cool from the hot water scalding and unwanted fat removed . Your vinegar and rinsing techniques will soon follow with multiple rinses just as you showed. This will make for less froth. For my paysannes -relax -scalding before properly cleaning is the exception for oxtails only to aid in the removal of fat. Try it! I will borrow your sugar technique and try your sofrito as opposed to mine. Also a spoon does the trick for peeling ginger. You are as obsessed as I am with hand washing and cleaning. Love it and now I’m hungry 💕

I loved this video, you cook clean and clearly with lots of love. This took me right back to 1984, growing up in the South Bronx. The smell of Caribbean food filling the hallways of our building; oxtails, platanos and arros con gandules (rice&peas). I can almost taste it already, I will be trying your recipe this weekend.

I can’t wait to try this recipe. The young lady that I knew made oxtail for us one time about 10 years ago and I really liked it a lot. It was the first and only time I’ve ever had oxtail she did make it different though. It seems like she used coconut milk. She was from Nicaragua. She said that you have to constantly boil them and change the water. I will definitely try this recipe at sometime or another..

My beastie from Trini taught me how to cook them. They tasted so good and they were falling off the bones... after cooking all day but it was worth it! The gravy naturally made itself. I don't remember adding tomato or brown sugar in mine but to each their own. I'm sure the seasoning and ingredients she used made it taste good.

I followed your recipe with the exception of cooking them on the stove. After i seared them, i put them in the oven because it's just more convenient for me. They came out delicious and my family loved them. Thank you for sharing!

The best way to remove oil and fat from your dish is to refrigerate it overnight. The next day, it will have formed a hardened shell on top, making it easier to remove. 👍🏽

Yes! I discovered that years ago and I never enjoyed the spooning grease removal method as something was cooking, stewing etc.. Refrigerate...hardened grease on top...scrape off with large spoon. Easy peasy.

This was an education for me, I've never seen this way of doing oxtails I'm from the Jamaican school but it really looks interesting and I dare say yes what a lovely colour when you caramelise the sugar. But I agree with another viewer who suggested the cooking wine instead of the water, I can taste how that would make it tastier and help the oxtail tenderise you also would not need much ketchup if any after the wine was added. Gonna give this a try. Keep cooking sweetheart.

B Russell yes! in the caribbean we cook different from Americans .I think she has some caribbean roots or caribbean friends because she brown her meat like some of us caribbean people....if there's no browning available we do use sugar for browning, but my oxtail would be more brown than hers.

Courage? It literally tastes like beef. If you enjoy steak, ribs, hamburgers... you'll enjoy oxtails. They have LOTS of fat but there are lots of ways to reduce the grease factor. Cooking them takes forever but don't be afraid to eat em. You'll love em!

I’m following this recipe today, although in England we don’t have the same seasoning but I’m improvising. My oxtail has been marinating in the veggies overnight in the fridge though.
