Paula, I'm a dill pickle person too. When I was little Mom made something called egg buns. She mix boiled eggs, chopped dill pickle, a little chopped onion, yellow mustard, mayo, salt and pepper. She put in on hamburger bun halves and topped it with a slice of american cheese. Then she melted the cheese a little in the oven. I loved them. They were great with soup or a salad.

I was raised on my mamas Homemade Egg Salad and Pimento Cheese. I only use fresh block cheeses too. Grated bag cheeses don’t melt right and taste different to me. They have a coating that keeps them from sticking in the bag. I don’t buy or use them for anything. Your recipes are exactly like my mamas except no onion in the pimento. I will try that next time. Yesterday I made Ham Salad using a ham steak I cooked in my fry pan. I added chopped pickles, chopped green onions, mayo, pepper and just a tad of yellow mustard. No salt because pickles and ham provide enough. Love and Best Dishes Paula from Texas.

Loved Tiger Woods.....this is the only time I watched Golf.....when he couldn't play or quit, I quit.....loved to watch Tiger win.....Love Pimento cheese, but never made this, I make egg salad & chicken salad, tuna salad, a lot so will give the pimento cheese a try....I just made egg salad last week, but I put both dill & sweet pickles in mine.....both together is good.....I put it in my Tuna also not always in my egg salad tho....I like black olives in most of my salads too.....and always a little heat in all of them.....

I make your pimento cheese recipe every year and it is all loved by all! I serve it with multigrain bread slices, baguette slices and also the large corn chip (like Fritos) I can assure you it disappears every single time! My grandmother put up pimento using red bell pepper from the farm. Peppers were cut up and then put thru a grinder(by hand) Then she would cook that with vinegar, sugar, flour and mustard Then it would be put up in jars Sandwiches were made every day The pimento, grated cheese, boiled eggs and Miracle Whip Spread on White bread and then the crust was cut off. @@jaimeserver9416 Bread isn’t good for us diabetics. Unless you use low carb bread, 2 slices of white bread like Paula used is close to 48 grams of carb. I’m not on insulin so I mostly control my glucose through diet so that’s a lot for me

My friend used to always make pimento cheese appetizers for potlucks. Instead of sandwiches, she'd press buttered white bread into muffin tins, scoop the pimento cheese into the cups, and bake them until the bread was toasted. It was absolutely divine.

In Maryland, they don't add onions to the cheese spread. I might have to try it with the grated onion. I add grated peeled apple to my egg salad. My kids loved it.

The only golfer I ever cared to watch was Lee Trevino. And the thing that made it tolerable was they would stop filming between holes so the audience didn't have to watch the golfers walking to the next hole. I like about 4 bottles of pimentos in mine, I like it sweet, I use a lot of stevia sweetner. I tried grating the cheese and store bought schreaded. I couldn't really telll the difference. Dukes mayo is the best.
