So, I tried these with cream cheese instead of the mozzarella, and they turned out almost exactly the same, just a more mellow flavor. I added SF honey substitute and honey extract instead of the erythritol and made a half recipe for 8 biscuits at 180 calories and 2.66 NET CARBS each (That was the same carb count I got for your recipe).Just tried one with butter and homemade SF strawberry jam...Yummo!Great recipe Kristie. Kristie, I found this video on FB shortly before Thanksgiving. Had to try this...took me 2 weeks to find/get oat fibre. Your biscuits are TOTALLY AMAZING. So far we have had your biscuits....then they became cranberry/orange ‘scones’...then lemon poppyseed, then carrot/walnut with cinnamon/vanilla cream cheese frosting, cranberry/orange with lemon curd, and jalapeño/cummin scones...and jalapeño biscuits. Such a wonderful ‘miracle biscuit’ recipe. I have a daughter with MS and can’t have whole eggs or any grain flours...plus a lot of other food limitations. Thank you so very much...Sandra Rodrigues

I have made these biscuits many times. I used the oat fiber, but didn't like the flavor. I used the coconut flour instead, and these taste JUST LIKE THE REAL DEAL! OH MY GOD!!! This is the best gluten-free and low-carb biscuit I have EVER had! What just happened in my kitchen? OH MY GOD! That oat fiber is phenomenal! My family is going to flip Christmas Day. OH MY GOD... it's real, not dreaming, not dreaming. Upon many edible reflections... the only thing that needs to change is the texture. Mine came out spongy. The taste is spot on. Makes up for the sponge ten fold. Wow... 😍

These are absolutely the best biscuits I have had since I had to go gluten free and low carb 5 years ago. I left the Parmesan cheese out because I now have to go dairy free, too, and they were just yummy. They are very light, too, and mine rose nicely. I am so happy we can use oat "fiber" now. I do agree it gives a more flour consistency. Love your videos - keep them coming! Thanks!

Made these this morning and they are wonderful ! Being raised in the South, I miss my biscuits and gravy, and I'd kill for a country ham biscuit! It's sad, no country ham in the West. I don't usually provide nutritional information for recipes because it really should be based on the ingredients that you use. also, serving sizes vary a great deal by person. I stay under 20 total carbs per day, so most of my recipes are pretty low carb. the biscuits are about 3 total carbs each and I can't remember the pancakes. the jicama apple Danish is 4 carbs each. hope that helps!

ratmgr2 Absolutely agree! It's super hard when the rest of the family doesn't eat keto. I talk a little in my "how" video about transitioning the family, but it's something we need to spend more time with for sure! Giving them super delicious food is the easiest way to convince them, but you also need to spend some time educating them as to why this is a great way for most folks to eat.

I'm still learning how to cook using sweeteners. It's so confusing, or I'm just making it harder than it is. LOL... Anyway, I only have Stevia (in bulk & in liquid). So would I still use a full Tbsp of the bulk for this recipe? TIA & Thank you for the great videos.

Sweeteners can be so confusing!!! Stevia powder or liquid is highly concentrated. I'd start with 1/4 tsp and add 1/4 tsp at a time until desired sweetness. Most manufacturers will give you a little guidance on the container for a sugar equivalent. Hope that helps even though I can't be specific. There's a lot of variation in sweetness by brand. It's truly trial and error.

It's higher with coconut flour, but I don't recall off the top of my head. I use different websites to calculate the ingredients. Self Nutrition Data is a good one. You put in the exact ingredients you use and the relevant serving size, and it's pretty accurate.

+CutoDracon There are different thoughts about the safety of almond flour, but that is one of the reasons that I use a lower heat, sub out oat fiber for some of the almond flour, and limit the consumption of baked goods. Having said that, pecan flour and hazelnut flour can often be easily used instead of almond flour. It will change the texture and taste, but it can be used and it's lower carb than almond flour. I'm afraid that other ingredients would be much higher carb.

Rosanne Hadlock I don't post nutrition info for two reasons. 1) Carb counts vary a great deal depending on products. For example, I make it a point to use 1 carb per serving cream cheese, but not everyone does. 2) Carb counts also vary by serving size. I can easily get 8 servings out of the crack slaw recipe, but my husband struggles to get 4 or 5. :-) There are some great websites that will calculate nutrition for you. Simply cut and paste the recipe and it's really easy! I will tell you that I calculated 3 total carbs for each biscuit and 5 total carbs for 3 pancakes. Hope that helps!!

Marlene, I have to keep my carb counts low, so I understand. The almond flour and eggs are the sources of carbs here. I honeslty can't remember what the total carb count is. I want to say 3 or less per biscuit when you eat 1/12 of the recipe. There are great online sites that allow you to put in recipes using your exact ingredients and portions. I know I can eat one of these and have no blood glucose issues. Hope that is helpful.

Where did you order the oat fiber from? using coconut flour gives them more of a muffin texture. None of the health food stores I have looked in know what I'm talking about. Help....

drawlings10 You can order oat fiber from several online places. Honeyville, Netrition, and Trim Healthy Mama all sell it. Let me know when you try it. It makes all the difference in the world!

drawlings10 yes. Just oat fiber, not oat flour. I haven't priced it lately. If you only want oat fiber and not almond flour or other things, netrition is likely the best price. I'd definitely check all three websites.

drawlings10 well....kinda. keep in mind that some of wjat I share is an original recipe and some are from other bloggers whom I always try to credit. As for bread...when we don't want a biscuit, I use either a Flatbread recipe, an almond flour loaf, or a fathead pizza type crust that makes a great roll. Maybe I need to do just a "bread" video. Hmm.....

I doubt the would work in this recipe, but I have a flat bread recipe that is nut free. It's great for dips or sandwhiches. We make grilled cheese sandwiches with it fairly often.

+frenchis19 hmm....I won't tell you that because I don't think you can ever get the same texture with low carb ingredients. I will tell you they aren't eggy and that using the oat fiber gives it the best texture I've found.

What's the difference between the paleo diet and the diet you're doing? I've heard the paleo was not a good diet especially for women/

I can't imagine why paleo wouldn't be good for women! paleo is whole, real nutrient dense foods. I do a very low carb version of paleo. it's not good for pharmaceutical companies, but I know no evidence that it's unhealthy for most individuals. :-)

That encourages me / I have a sister who was slim for a long time and after going through a abusive marriage for 25 years , she gained weight where as I didn't recognize her / she's has been struggling for years now and I've looked into many diets but, so many had restricted calorie intake rather then watching what food you eat/ I have been focusing on high fat low carb / today however , I heard a woman claim it made her weak and after 6 months she claims she started gaining weight/ what I caught I. Her claim was (( she was from a country where they eat lots of grains and carbs! So i don't know if she was just missing the carbs and cheated or if it's a real effect. I really love your story and I think you're dedicated to it , therefore I believe what you're saying ! As for blood pressure and other important Heath issue , had yours improved like most people claim? Thanks for informing myself and I'm sure so many others.

+frenchis19 Please don't take my word for it! There is so much to read. Look for information about Paleo from Robb Wolf, Chris Kresser, Sarah Ballantyne, Paul Jaminet, and others. For information about Keto or very low carb, look for Dr. Eric Westman, Dr. Phinney, Dr. Volek, Dr. Jason Fung, Dr. Sarah Hallberg, Professor Tim Noakes, Christine Croneau, and Dr. Andreas Einfeldt. Lots of sound information out there if you follow the science. I hope that you and your sister are able to find something that works for you.

I've read Westman and Voleks info but seeing it at work In Someone's life is proof to me. I don't read too much about side effects however , so I inquire with those who have truly been loyal to the way of life. It's like when Atkins became popular and there is much great science to uphold it but you cannot deny the results from so many who have profited from it. Much like yourself : Yet there was ALWAY someone (( usually vegans )) who found fault!I guess I just wanted to know if there were any side effects . Thanks

And while low carb high fat has been wonderful for me, I understand that it might not be a great fit for every one as every body is different. What I do know is that it works well for me. And you're right....seeing something in "practice" and how it works in real life is always useful. :-)
