They look really good. FYI if you take a 1/3 of the whites and fold in first. And then take the rest, the mix will be even more fluffy and light. (I have work 10 years as a chef, with specialty in desserts)

I'll try this the second time around. I was able to get the stiff peaks but then for some reason it watered down a bit and looked more like pancakes 😆

Recipe typed out y'all! Keto Cinnamon Roll 3 eggs, separated (whites in mixing bowl, yolks in another larger bowl 1/2 tsp cream of tarter into egg whites Beat egg whites into stiff peaks To the egg yolks add two packets of stevia and 3 oz of cream cheese and a pinch of Himalayan salt, mix into cake batter consistency. Next, take 1/3 of egg whites fold gently into yolk mixture, add cinnamon to taste. Fold the remaining egg whites in until incorporated Parchment lined cookie sheet stack dough in high clouds 300 degree oven 30 minutes Icing (mix the following together) 4 oz. cream cheese 4 TBS butter 4 packets of stevia 1/2 tsp vanilla extract 1/2 tsp cinnamon 1 tbsp heavy cream 1/2 tsp lemon juice Nutrition 200 calories 18 g fat 1.2 carbs 7 g protein

Have you considered placing cream cheese mixture in a ziplock bag. When ready to use snip end off then you can pipe it on make it actually appear visually more appealing

Made this for my husband. 👍 He has Lymes and has to draw from keto for baked goods because the stevia doesn't cause his joints to ache the way regular sugar does. He loved these! Thank you for the recipe

My husband and I have been keto for 55 days. He asked for keto cinnamon cake and I ran across this recipe. They're in the oven now! Mine came out flat out of the gate - maybe because I out a drop of vanilla in the batter- but I'm hopeful the flavor will be just as delicious! The icing is awesome. Could be a little sweeter for my taste but my husband was salivating after tasting it and the kitchen smells awesome. Taking them out now!!

These look so good! I'm new to keto and am looking for recipes. Can't wait to try it! Have you ever lined the pan with parchment and smeared the mix on to make a thin cake? Then you could add the frosting (when cooled) and roll it up and cut them...sort of cinnamon shaped. I know that's way more work! lol

Brilliant recipe, my sweet tooth is gone on Keto but if it comes back, I'll have the ingredients in my house to make this. 30 mins is all it takes and I always have these ingredients so I'm all set!

Mouthwatering; thanks for the inspiration! I shall have to try it soon, although I think I shall make a few changes to make it closer to the cinnamon roll I was hoping for. Firstly, since you're essentially making a meringue with more body, I would let them cool down completely in the oven (don't open the door) so as to keep the height. I would also pipe on the icing so as not to break the fragile top. (.... how to eat one while letting the others cool without opening the oven though....). The buns do look extremely good when they come out of the oven; perhaps I would make a base and a top, and then put the filling inside, like a cream bun; hazelnut perhaps instead of cinnamon. If you wanted something closer to a cinnamon roll, you could add almond-flour to make a paste that (maybe; seems risky?) could be rolled. One other thing; if you're doing Keto you're probably going to often be beating egg-whites -- get yourself a _copper_ mixing bowl; the chemistry involved (something about ions; I'm not a chemist but see Cooking for Geeks) makes a much better texture to the egg-whites and is faster too (compared at least to a stainless steel bowl). Thanks again!

It's also carcinogenic. If you want a sweetener that won't affect your blood sugar that's not a artificial and safe, use allulose

maruchan664 Stevia is also reported to have anti cancer properties. It probably doesn't cause cancer in the amounts humans typically ingest, similar to aspartame. Don't worry, allulose is relatively new and some genius will soon commission a study to 'prove' it's bad for you too.

U could add sour cream instead to me it makes the eggs fluffier & tastier I add 1 tsp.per egg when making scrambled eggs.Also Baking Powder 1 tablespoon mixed with an acid like lemon juice,lime juice,orange juice,or even white vinegar reacts with the baking powder & it rises alot.This is great when making the oopsie bread.

I am confused as to how the protein was added up to equal 42 gms? Eggs have 6 gms apiece so 3 eggs equals 18 gms in this recipe, cream cheese has 2 gms protein/ounce so 7 oz in recipe equals 14 gms. 18+14=32. No protein in butter or heavy cream.

I've been doing Keto for 2 weeks now. Had a craving for something sweet the past couple of days. Found this recipe and couldn't wait to try it out. I followed the directions exactly, kitchen smelled amazing!!! They came out exactly as your video. Unfortunately they were not good at all. Huge disappointment. I figured maybe it was just the first one I tried that wasn't so good, so I tried a bite of each one. Nope, still not good. My husband tried them and literally ran to the trash can to spit them out. Am I missing something?? I will say the icing was good. The actually rolls themselves tasted worse than cardboard. I appreciate your effort and sharing the video.

Try Trader Joe's brand of Stevia, powder or liquid - i love the liquid and carry it in my purse - great to have if you like going to Starbuck's or Coffee Bean! Absolutely NO AFTERTASTE!!! It won a contest against 15 other stevia products!!!

berighteous , I use erythritol, I buy it on Amazon. It's not quite as sweet as sugar, but doesn't have any of the nasty off flavors of other no-carb sweeteners. Much safer than Splenda (sucralose) as well. That stuff is bad. Not as bad as aspartame, but it is pretty awful. .

berighteous Don't use splenda. It's absolutely toxic to the gut and the brain. Destroys healthy bacteria in stomach. I know, I love it, but it's just not healthy.

I made these as soon as I watched this video and I am happy to say they turned out looking exactly like yours but unhappy to report that I didn't really like them. I think the fault lies in the stevia and the texture of the buns being odd. I am new to keto so maybe I'll get used to stevia. However, thank you for posting the video and the recipe. Cheers

It would be perfect to frost these while hot so only a light glaze was on them. I wish we could have seen what they look like on the inside after they were finished and perhaps a critique from the cook... thank you so much for kindly sharing

daisy3690 I make them often and they are delicious!!! The inside is light and fluffy, not thick and condensed like a true, sugary cinnamon roll. The taste is so yummy and I prefer them on the next day, cold. That's just me. 😊

+feliciannurse I have a question . As a raw vegan I and many others like myself promote for obvious reasons , having organic , fresh , local in season fruits and veggies . Everytime I see anything mentioned by someone on the keto , almost all ingredients are processed and mention of quality is not included . Sheer curiosity , is this not a high priority consideration ? Just wondering . Thanks .

Jan I have to partially disagree. Most of the food I consume is real, natural food such as eggs, meat, low carb veggies, mushrooms, heavy cream, natural cheeses and saturated fats but there are some processed foods such as bacon. I try to buy organic when possible. Kerrygold butter comes from grass fed cows in Ireland and it's delicious. I suppose you could say that butter and cheese are "processed" but they are very old processes.

I made them! He liked them ok, but since it was basically cloud bread, he didnt find them substancial enough. I actually liked them without the icing! :D just a barely sweet cinnamon flavored cloud bread is pretty nice. :) OH! i dont know what happened, since i make cloud bread a lot, but i could NOT get mountains of batter on my cookie sheet. The batter got all runny after the first bread. (before i even baked them! So i ended up using silicone muffin cups. worked well :D Thanks again so much for sharing :)

Would using a piping bag work, to squeeze the mix onto the pan? You could make circles and make it look like a roll...lol

Just take a Gallon-size Ziploc bag, load in the batter, squeeze out all the air forcing batter to one corner, Zip it up, Cut one corner and Voila'!! You're now a profession-at-home baker!! LOL It works for me! Also great to make your deviled eggs look fancy!!

I have to wonder why people dislike videos like this. Why do that? There's no other reason than pure meanness. I like to think, though, that the likes represent how many nice people there are in the world compared to the few mean people we all have to put up with. :)

Not a great idea if you are strictly doing keto. You'll end up with 21 grams of protein which in-turn will be converted into carbs in your body and wouldn't loose weight.

Mine did not come out as tall as your buns but that was ok. It was delicious and I decided that they make a good pancake. Better than any other keto pancake I have tasted. I stacked them with the cream cheese filling and added strawberries OH MY WORD!!! It was delicious. Thank you for this video.

I made these today and they look nothing like yours. I think it may have something to do with the cream of tarter. I wonder if maybe mine went bad. They were still delicious though!

Cassia contains a lot of coumarin, which can be toxic in large quantities. It is much safer to choose Ceylon if you eat a lot of cinnamon.

So for the life of me I couldn't get the egg whites into stiff peaks! Any idea why? I followed the instructions

My Keto Fasting Journey - I know your post was a while back. One thing that can keep egg white from whipping to stiff peaks is if the whites have any oil in them. So, the bowl and beaters have to be really clean. When you separate the eggs, you have be really careful that NO yolk gets into the whites. And, before separating the eggs, wash your hands with soap, so the natural oils on your skin won’t be a problem. Hope this helps!

Amazing macros, but still, the reason many are doing keto is that they are carb/sweet addicts to begin wtih and cannot stop at one (and in fact, would probably eat them all at one sitting). Although in this case, the problem wouldn't be the carbs, but the 42g of protein that might be too much at one sitting. I'd have to exercise will power and split it into two meals.

+MrTrashcan1 I know. You need a lot of protein. I fast and eat huge meals. My biggest meal of the day is usually around 100 grams of protein. If you are trying to lose weight your protein needs to be within 20 grams of your body weight in pounds. It keeps you full and makes sure you are losing fat and inches off hour waist and belly, not inches off muscle off your arms. Even if you don't care about looking ripped you need more protein

+Dylan Hale I disagree about needing so much protein. I was eating as you do and my weight loss stalled. I know our ancestors probably went days without eating and then feasted when they caught something, and under normal circumstances that's fine. But they weren't trying to lose weight. The prevailing thinking is that too much protein at one meal will cause insulin spikes which will slow fat burning and turn on fat storage. The body conserves muscle mass--makes no sense from a survival standpoint that it would burn muscle before fat. And that's consistent in most animals.
