Ingredients for 2 big bowls 🥣
4 boneless chicken thighs
marinated in
1/8 cup sugar free soy sauce
1Tbs vinegar
1 tsp garlic powder
a touch of lime juice
Curry sauce
Make a curry paste in the blender, refrigerate up to 2 weeks
1 chili pepper
a small onion
3-4 garlic cloves
ginger 5cm 🫚
20 g curry powder
lime juice
75ml coconut cream
For the sauce, fry 2Tbs curry paste in oil for 1-2 min, add 125 ml coconut cream and cook until creamy.
1 bag mix salad 🥗
1 avocado 🥑
50g protein low carb rice (cauliflower rice for keto version)
some grilled asparagus
onion slices
