@@kevinhoughton9134 he's a good artist. Artists are supposed to be creative and inventive. All art is dependent on taste - he's been in the business so long and has such comfort - he needs the dopamine hit of something new. I love this guy even through some of his more odd combinations. He comes around and I really appreciate his exploration - that is how beautiful new flavor/texture/mouth feel/preparation combos are found.

I love Jamie. He makes such humble, easy recipes for the average person. I know he's gotten a lot of slack from other KZbinrs for doing shortcuts but I am so tired of these pretentious cooks and all these purists. No, this is not a real curry but that is not the point. The point is to feed yourself or your family with healthy and delicious food. For the vast majority of people that is enough.

Do you know what's great in Curry, Stir Fry or even Traditional Soups? Cashew Nuts! Just throw them in at the end of frying your chicken or on their own, all they need is a couple of minutes until they start to turn light brown, they are one of those ingredients that absorb the flavour of the dish! Full of protein and healthy minerals, great for vegetable based dishes and a great way to beef up your dish for extra texture and presentation! Also cheap! PS No I don't sell Cashew Nuts! 😂

@@Otterwithdahat you clearly haven't tried it and therefore are just putting other people off. In india many recipes add sugar, honey, jaggery, coconut milk and tamerind paste to balance and enhance flavours in a curry. A curry is not meant to burn your tongue or gut. They Portuguese brought the humble chilli 🌶 to India before that. All curries were sweeter. You are just nieve.

Actually, I consider the coconut milk as optional. I also generally cut up the chicken and cook it in the curry sauce, which works well for me.
@CarelessForce Жыл бұрын
Agreed, I've tried it before but I prefer stock or just water. I don't brown meat for curry since the flavour gets lost so I prefer to cook it gently in the sauce so it ends up more tender. Those Patak's spice pastes come with a recipe on them that is basically this minus the coconut, chickpeas and chili, always comes out great, my fave is Madras.
@Kabive776 Жыл бұрын
Why even make curry if you're not going to use coconut milk/cream. It defeats the whole purpose of making curry, like removing the seeds from your chili peppers.

So many beginner cooks underestimate the importance of having very high quality (sometimes pricey) pantry staples - really good pesto, oils, tomato and anchovy pastes, broths and stock concentrates, iconic condiments, ready made curry pastes, pickles and pickled items - any can be a very high quality starter for amazing sauces, brines, braises and stews. So many chefs and cooks I'ved worked with privately admit to these no compromise short cuts - let someone else make pestos and curries and moles and stocks so you can make no joke, real deal delicious meals - it's a secret but don't tell anyone!
