My dad is well and now living in Greece with other family members. It was not working out with us here. He became a wanderer and we were worried he would wonder away in the desert. He wanted to go back to Greece and live his final years there. So now everyone is happy.

I've just started watching but am so impressed with your kind heart. Thank you for taking care of your father. My mother lives next door to us so that I can care for her as well (she will be 90 in a few months) and have been wondering how I can encourage her to eat these kinds of meals. I will be now be binging your videos!!!!

Thanks so much for this recipe Nini; I will make it! Just now reading your description notes after viewing the vid several times since it’s posting. I will add you, your dad, and family to my prayer list. My mother used to live w/ us when she battled dementia. I know exactly what y’all are going through. You are one of my ABSOLUTE FAVORITES on KZbin…such a great inspiration to so many viewers to eat for optimal health. We understand & will be patient for your new content. What’s most important is spending quality time with your dad and family. What better person than you to give your father Whole Foods PLANT MEDICINE!! 🌱🌱👏👏Just what he needs. Since I experienced your “situation” may I suggest you all take turns asking your father to share his stories, his memories, that y’all can videotape. A priceless treasure they will be. Love you & praying for you, and as others have said-be sure to make time for yourself. It’s all going to be ok, Nini; do not feel any guilt when you need respite care sometimes. 🕊🌱❤️🙏

THANK YOU SO MUCH, NINI, for letting us know where you are. I will be praying for your dad and family as you transition to having him live with you. I am patient and will wait for your return. I don't want you to feel guilty but I have say this: I DO MISS YOU VERY MUCH. YOU HELP ME ALOT. So, I have decided that I'll just watch some of your old videos and be satisfied 🥰

Hey Berta! SO glad to see your comments. They always bring a smile to my face. I am doing much better. Have been consumed by family stuff. I got a breather these past few weeks, and it has been easier. Also, I went through a "cookers block" I just did not know what to cook for dinner anymore. It was so weird. All gone now. Hopefully I will be able to upload more consistently. Missing you!

Scot Girl! I thank you for your kind wishes! I am so sorry about your husbands father. I have lost many members of my family from cancer and it will scare you straight. I am reading the Outlander books for the 3rd time and thinking of your Scottish men in Kilts! It is cheering me up. LOL!

I miss croutons so much!!!! Going to have to try this this week! Good luck with your dad! He is in the best place to get better. I wish my grandparents (who are my parents to me) would listen about diet. My grandpa has type 2 diabetes, and my grandma has dementia and it is getting so bad.

Your Dad is lucky to have you and he will be very well taken care of in your home. Make sure you take time for yourself too, Nini. Elder care is quite demanding especially when dealing with cognitive as well as health issues.

These are great! My mother always is wanting some healthy croutons. How much moisture do you give the bread? Do you look for them to be just slightly wet but evenly moist?
