Bean and potatoes are our go to quick meal. I'll have to try the lemon juice on the roasted potatoes that looks really good! I like peas as a side with my potatoes. An oil free vinaigrette is also good on potatoes. Thanks for the ideas!

Thanks for your reply! I believe the biggest challenge are my littles (4 and 5) They like fruits and veggies and so far have liked most of the vegan recipes I have made but I have one Cheese Pizza and mac n cheese lover and one Chicken lover. Ill never forget our first time going to a family event after a few months of beginning our vegan journey, my 5 year old took a piece of chicken and hid under the table to eat it. I obviously allowed it because I didn't want to make it an issue but I am not so sure that will ever change with her. I guess we are a work in progress but with some of these recipes I feel a bit more confident. Thanks again for sharing and being so easy to follow.

Baby steps. With my kids when we made the transition I went for the ethical rout. It seemed to work. ie. we do not eat our friends or anything that has a mommy. They never looked back. Best of luck:)

SO funny I developed similar techniques for my single dad style potatoes. Since my kids are adults now and I'm in a studio apartment, I don't put the garlic and onion powder on the potatoes before cooking now. It smells great but it's too much for a small apartment. I use smoked paprika, something green like Mrs. Dash or dried basil, or anything really. And I cube the potatoes with a big onion and maybe some zucchini. 40 minutes at 350 is enough if you use cubes that are smaller than 1 inch.

You're so lucky that your family likes to eat this way. Mine are getting better, but not there yet. I just try to be an example, and don't say too much. Funny how they start to like the whole foods.

Ingredients onion, spices (black pepper, parsley, celery seed, basil, bay marjoram, oregano, savory, thyme, cayenne pepper, coriander, cumin, mustard, rosemary), garlic, carrot, orange peel, tomato, lemon juice powder, citric acid, oil of lemon It’s really a good seasoning mix! Good luck on finding a comparable product.
