@Stray Kitty’s Cake flour is high carb. This recipe is a low carb/keto, cake flour would totally be opposite of the function of this recipe, not to mention the quantities used for this recipe would not work for cake flour.

@@bonafiedbeauty1 Thanks for your feedback! I Yes, I am a strong advocate of coconut flour and any healthy ingredients. I have been asked why I don't use vital wheat gluten in my keto bread and my stand is that it is so unhealthy even though it may be high In protein, low in carbs and makes the bread rise sky high with nice texture. If you understand about the dangers of modern wheat, you'll know that this stuff is highly processed and all the bad stuff in wheat are also in the gluten. All these positive feedbacks from you guys helps to validate what I do so thank you❤

I made this today. Thanks for putting metric measurements too. My battery was more runny than yours, and it took a lot longer to bake( 1 hrs 10 mins) I just used coconut flour too , so expected it to be a drier batter. However, it's texture is beautiful, very light and tastes absolutely delicious. Thanks!❤

Use Xylitol for the sweetener if you don't like that "freeze" aftertaste effect of erythritol. I used a cup of it. This recipe is fantastic!

Easy to make. I sliced it and froze it in individual sandwich bags so I don't eat to much and microwave for about 10 seconds and have a couple slices a week. Best recipe I ever made !!!!

Made this just now!!! Delicious! I used 90g of monkfruit sweetener, 25g of ghirardelli cocoa powder ( I used less cocoa powder because this particular one is extremely dark and bitter) I then added 1/4 tsp of vanilla extract to the cream cheese batter. Elsie, THANK YOU! I am a former conventional baker who recently went on the Keto diet and now in the process of changing my business model to Keto baking. Texture is a big thing for me and have tried COUNTLESS Keto chocolate recipes but none have come close to this recipe. I omit the cream cheese and just made the cake bit, paired with dark chocolate ganache and wow! The moisture content, texture and mouthfeel is the best I’ve experienced. 🎉 I wonder, if I were to remove the cocoa powder and replace with 30g coconut flour, would that work for a vanilla cake? (Hoping I can also add flavours to that version to make other flavour cakes). Love from England x

Yes its correct. Coconut flour is very absorbent so need more eggs and liquid then will bulk up. So a little goes a long way. Then end result is that the coconut flour version will be a bit smaller in volume than the almond flour version

I normally use monk fruit, and grind it myself with a multi grinder until powdery. It's way cheaper this way than buying preground ones. For certain recipes that require chilling, I will use Allulose so that it does not taste grainy when chilled.

I have to use canned coconut milk for all recipes calling for whipping cream and goat cheese (chevre) for cream cheese. It usually tastes pretty good w/o dairy. Costco sells large logs of chevre cheese for $15 for about 20 ozs.

The recipe looks AMAZING! One question, though: In the recipe, it says 180 grams or 1.5 cups of cream cheese; 1 cup of cream cheese is 250 grams so 1.5 cups would be 375 grams...could you verify which is the measurement I should use? Thanks and keep sharing these fabulous recipes.

The cup measurement provided is based on US cup. 1 cup of cream cheese is 120 g so 180 g is equal to 1 1/2 cup. Where I live, the cup and spoon measurements are totally different and it even varies from different shops that I buy from. Hence, I have to Google to convert to US cups. That's why I always recommend to weigh all ingredients for accuracy as not all cups and spoons are the same everywhere.

Yes you can replace the coconut flour with 240g or 2 cups of almond flour, ground walnuts, hazelnuts pecans or sunflower seeds. Pumpkin Seed may not work as the ratio and characteristics are different.
