The cheesecake was there before the "creamcheese" was even invented (1880) Here we do the traditional old way with "quark". haha but who cares who invented it? I've tried so many non-Keto Japanese cheesecake recipes before but none was successful. Just tried this Keto version last night and it turned out perfect - the look and texture are exactly how it should be. It's genius to add cheddar cheese in lieu of any flours.

I tried it and it came out AMAZING! Mine cracked at the top but thats only because i wanted to see how it was doing and I opened the oven door. Im gonna try not to peek at this one. Making another one because my bf loved it so much. We love Japanese cheesecake and I was always looking for a recipe or trying to figure out how to do one thats keto friendly. @@lowcarbrecipeideas although mine did crack on the top once I set it to 180C in the end. I think next time I'll just bake it at low around 100 to 120C then turn it to 150C max.

I just tried it! Yes it is easy to make. You just need to follow the instructions as stated. I baked it in a larger springform pan so it didn't rise tall enough like mentioned. Just the same it tastes really delicious! I will make again in a smaller springform pan next time. Thanks for this recipe. It makes my keto journey easy and fun. I tried this and it tastes so good! My cake did raise pretty good. When I took it out, it shrink just by a little bit. But after I put it outside to cool for over an hour, the cake shrink even more. If I compare the height before baking, I think it raises about half inch. I used 9 inch container, is that the reason why?

Oh 9 inch is too big for the recipe so the cake will be flatter. It's normal for the cake to deflate slightly. If you follow the updated baking process the cake should rise gradually around midway that's why it will not shrink too much.

The taste is great but tried two times already and cake still didn’t rise. What could be the issue? I was only very careful to fold the white in the yolk mixture, not mixing as much. Also there was some moist at the bottom of the spring foam pan even wrapping a few layers already.

THe most important part is merengue from whites, if you made it not soft peaks or mix it not great it will deflate.

If you follow the baking temperature and timing, it should not collapse. The key is to start low in temperature and let it rise gradually. If the rise is too rapid, it will tend to collapse. Even if done properly, it is normal for the cake to deflate a little bit.

8.5 inch pan is quite big as the recipe is meant for a 6 inch pan. If you use a bigger pan the cake will be quite shallow. As for baking time, it sd be more or less the same

It would be best to use the powdered or granulated type. Liquid stevia is possible but need to be careful with the amount as too much may add to the moisture level.

Hi Elsie,really love your recipe and never fail. Today i made this jiggly cheesecake and everyone at home like it even they said it taste better than uncle tetsu cheesecake. But i just wondering how many medium size egg needed? (In recipe 4 large eggs) i only have medium size egg for now. And one more question, after 90minutes, can i open the oven to throw away the water?Thank you 😊

That's awesome Cecilia! So glad everyone loves it. You can use 5 medium eggs. Yes you can open oven after 90 mins and remove water bath but if the water has dried up then no need to remove then let the cake rest in oven for 30 mins

I tried this recipe but added a little vanilla to this. Taste was really good but after rising it collapsed during the time when I left it in the Oven for last 30mins without water bath. My pan was larger in size so I understand it will not rise as much but it rose and then collapsed which is what I don’t understand.

Its normal for the cake to deflate to certain extent after rising. But if it totally collapsed it could be due to the oven temperature. How long did you bake the cake? And what kind of oven are you using? Some ovens the top heat could be too hot causing the cake to rise rapidly then collapsed as the inner texture have not reached a stable enough point.

lowcarbrecipeideas I baked for 90 mins on my lowest rack and then 30 more mins without water bath. I tried this recipe 2nd time with 6 inch pan. The results were better but my cake cracked a little on the top. Not sure why. I have a convention oven.

As the ramekins are small you can try baking them for 60 mins at the same temperature with water bath

Unfortunately I failed this one 😑 Have you made the egg white stiff peak without any sugar ??!! I add Stevia (15g) with cold egg white, it turned out bad taste and it didn’t turn into stiff peak. Then I found out that I should use the room temperature egg white. The foil didn’t have a whole, but the water got inside the cake pan. Did I put too much water ??!! Or was the water too hot ??!! Any tips ??!! Thank you !! 🙇🏻♀️

The egg whites should be cold and beaten with keto granulated sweetener until stiff peaks. It only takes about 4 to 5 mins. What kind of stevia did u use? The foil sd be wrapped tightly. I used 2 layers fir better protection. As long as the hot water is half way it sd not get into pan. Plus the ovean heat is so low it wouldn't boil over.

You can also use a solid base pan so no foil is required

Chieko Walstad stevia powder is really strong and has a bitter aftertaste if too much, monkfruit sweetner is a better option
