You’re video gave me faith. I asked my girl to grab a brisket from my local butcher. I failed to mention what cut so she came home with a super lean piece. Leaner then the cut in your video, there’s next to nothing in terms of fat. I was going to toss it in my slow cooker but would you recommend I give your method a try ? I’ll reiterate that it’s really really lean.

We need more of this! Most channels drop a5 meats and flexing but it isn’t realistic for most. Cheap cuts with the growing cost of living, absolutely love this!

I smoked 2 cheap flat briskets from Woolies today in an Ozpig smoker. Cooked for 5Hrs on smoker at 200F before wrapping and then finishing in the oven at around 300F until probe tender. Rested for 2Hrs in Esky covered top and bottom with a towel. Also Added some tallow at the wrap from this brisket and a previous one. Very impressed with the result. Turned out very tender and easy to pull apart.

TOP CONTENT, well presented, using quite challenging materials and products - this is very helpful. Wow, obviously the reason for zero dislikes! Usually I do not like BBQ challenges and try to avoid any surprise w. best material and products. This time, I guess I do have a challenging situation: I have got a Brisket, only the flat piece w/o any fat on the outside and very thin. I bought it because the meat is of the highest possible quality w. very nice intra-muscular fat, like 5 pounds. Since it is unfortunately so thin, I decided to make a roll, nice and tightly tied, and add beef fat (from previous cooks) in the middle of my roll. As it is, I will grill it at 130 °C until core temp of around 70-73 °C. In case of a nice look and barque I am going to finish in US butcher paper covered with a foil boat below until around 93 °C core, when it is hopefully soft enough. I will put it in our oven with a temp of only like 50 °C, possibly for many hours until my family is ready to eat it. Let's see. I am using a Big Joe 3 with the included Slo roller + also the heat deflectors, temp monitored via the Meater Block.
