Nicoise Salad is one of my favorite things to eat and something I ate as a child. This is a simple way to put a lot of flavor into the Tuna. Nicoise salad
For the Nicoise dressing
1 clove Garlic, shaved on a microplane
1/2ea Lemon juice
1 tbsp Dijon mustard
1ea Shallots, chopped
4 tbsp Olive oil
Pinch of Salt
Pinch of Pepper
1. Add everything but the oil to a bowl.
2. Slowly drizzle in the olive oil while wicking constantly to form an emulsion.
3. Season with salt and pepper.
To build
1 cup Mixed greens
6ea Cherry tomatoes
1/2ea Red bell pepper
1/2ea Green bell pepper
1/4ea bulb Fennel
1/2ea Celery stalk
1ea Persian cucumber
10ea Kalamata olives
1ea Boiled egg
4 tbsp Nicoise dressing
½ can Tuna, canned in oil
Scallions, sliced
Radish, sliced
Salt
Pepper
1. Add the greens to the bottom of a plate and top with half of the dressing.
2. Top with each component making sure to do the scallions and radish last.
3. Finish with the salt and pepper.
