Gidday Luke, been following you for a month or so now as well as watching all the older vids and they are just getting better. I especially like how the family gets included in all your vids, that little girl of yours is going to be a great offsider for you in a few years as well. When I cook my fish all I use to coat the fillet is whole meal plain flour with lemon pepper mixed in, it may work for you. Thanks for your effort mate.

Great work Luke. Your adventures and casual approach is nothing short of refreshing and pure entertainment! You are spot on with coral trout, they are an epic fish to look at, catch and taste sooooo bloody delicious. You guys are on the right track, but try cooking smaller portions in tempura batter ....you'll be amazed how awesome they taste and the batter won't detract from the taste of the fish. The key to cooking with tempura is to keep the batter consistency quite thin and really cold, that way it will crisp up as soon as it hits the oil. One bit of advice, get yourself a species identification chart as you don't want to make the family sick by eating a species that might carry ciguatera e.g Paddletail Snapper. Keep up the great work dude.

Another awesome video, put a smile on my face. I love how you are uncensored. Beer batter is great , just need to find the right recipe. My beer batter is Beer , soda water, plain flour, salt, pepper. The batter is there to compliment the fish, so I don't use thick batters, thick enough to lightly coat your fingers. Been a chef for 22+ years and my speciality... Seafood

Hey bro good recipe for the missus to try for the fish, this goes for all reef fish In a bowl get a bit of panko bread crumb season the crumb with a bit of all purpose seasoning lemon pepper salt and pepper and a pinch of mixed herbs Get about 2 eggs whisk them up in a bowl Cut your fish into bite size pieces and dip it in the egg then the panko mix make sure you really get the panko on there and then shallow fry it in rice bran oil, rice bran oil won't burn the crumb and then I'll ask the misso for the secret sauce recipe and I'll get back to ya if you like Keep the videos up bro you're a good watch 🤙🏼

Great video. As others have said, that was a paddletail, not a red emperor. However, the reason they are no take is because they have a high risk of giving you ciguatera poisoning if you eat them. There are other fish that pose the same risk, so make sure you get a positive ID before eating if you’re not sure. Take care mate

Coral trout recipe, I think it’s master foods or Mcormick Tuscan seasoning mixed with flour, dip the fish in egg first and then coat in flour mixture, tastes like kfc coating, very nice

Best way to bleed the fish is to cut their gills out completely mate, followed by knife or spike to the brain, on some big blood filled fish cutting their tails helps a lot too😊
