Hey I just seen this I'm late lol next time smoke it fat side up I usually rub it put it in the fridge overnight bring to room temp put on ur smoker fat cap up I spritz mine with apple juice keep around 225 to 250 when done wrap in tin foil like u did but then wrap in a beach towel and put in a empty cooler for 2 hrs give this a try tell me what u think eric

Eric, looks delicious. As a kid, I remember my grandfather would cook chicken in an old steel refrigerator laid on its back. It was a strange contraption but it was some of the best BBQ chicken! This was 1980,s in Louisiana.

Wow that pit barrel cooker is fantastic, I love that it's so basic that it makes me wonder why most of us don't get one to use, for pork sandwiches and ribs looked amazing. Yes I believe it would be a little rough eating ribs and sandwiches with braces. It's to bad that they don't have portable braces where you can loosen a couple screws and pullem' off for rib eaten' time. Oh well it was just a thought 🤔 Hope you all had fun, was a fun video Thanks 🐾👍

Getting a good external thermometer like that has been an absolute difference maker for me and my smoker. We did a brisket and a turkey breast last Christmas and it was sooooo good.

That was an awesome cook. The PBC is the bomb. I made some PBC ribs not long ago and they turned out great as usual. Probably the easiest smoker out there to operate. I've had one for about 8 years and it's one of my favorite smokers that I have.

Wow Eric, you are the all-around-guy! Nice work on the BBQ. One thing your viewers should know is that the thermometers are the key to success (on any BBQ or grill); especially with pork. And yes, I am a BIG TIME Thermoworks fan boy. (I have their 4-channel "Signals", and Thermapen ONE). Fast, and very accurate. Getting pork to just the right temp is key to getting good results. Their website has plenty of cooking advice for BBQ and grilling; I am always learning new stuff (including automotive repair at SMA!). By the way, if you had lost part of that rack in the pit as you removed it, then you would definitely have needed to employ, "the classic reach-around". 😲 Thanks for the video; I really enjoy all that you share on the KZbin!

If those Ribs split and fell on the coals they would have been subject to the 5 second rules. I'm salivating now. Looks absolutely delicious Mr O. One of the things I like about you Mr O is how respectful you are of Mrs O. You can't fake the way it just rolls off your tongue. It's nice to see that you were obviously brought up right. Unfortunately, from what I see of some of the younger generation, this is lacking. I'm not saying in all people, but I respect my Wife the way you do Mrs O. It's nice to see manners aren't completely gone. It's the generation below you Mr O is the issue but I'm sure your family will carry on the tradition.

Sweet smoker Good job Happy to see you’re starting the coals with the right equipment. I’m a fan of “lump” charcoal vs briquets. Briquettes always have a lot of weird things in the ashes and have a lighter fluid smell.

Been smoking meats over 35 yrs and used the weber smoker for many years ( my son has it and is still working great. The Pit barrel I have used for just under 5 yrs when it just fell apart due to the heat and cold start. I moved on to the treager pellet smoker man what can I say you just set it at the temp and stick in your wireless probe in and forget it. Take a look at the bearded butchers they have great tip's on the meat's cut's to use and cooking with the Big green egg and the treager. When you get old and lazy you love the fact you don't use kingsford or and other brand of charcoal since it is made with chemicals to enhance the charcoal cooking time Lump coal s the way to go if using charcoal. The pellet's are all natural wood with different wood choices to cook with and Best of all you just make sure the hopper is full with your choice of pellet's and just turn it on and it's coming up to the temp you wanted. Just a Lazy way to smoke grill or what ever you want to cook.

Nice,enjoy the show , as a old mechanic and cook I remember this phase. Might want to sandwich the butt in foil, makes it easier. Couple of slices in the meat helps cooking time and more bark, chicken broth after shred and sprinkle of rub after to taste.

Eric, I highly recommend trying Oakridge BBQ rubs. I know there are so many different rubs on the market and everyone has their favorite, but their products are definitely worth a try. All the ingredients are listed on their website, and you'll see that they don't use any fillers or stuff you can't pronounce.

Subbed,didn't realize y'all had a second channel.I always smoke pork butt/shoulder fat side up,I was told this helps 'lubricate' the meat as the fat melts.Looks like the doggos were VERY interested in the pork!Just proves that dogs are smarter than cats!

In his case, it’s best to do it fat down as the fat protects the meat from the direct heat. There’s enough internal fat marbling that the fat cap being down won’t effect how juicy it is.

Eric, Vanessa, you guys knocked this one right out of the park!!! Dang that looked good. I wanted to start licking my computor screen ☺ I`m subbed to your other channel, and now this one too. Didnt even know you had this channel, just happened onto it looking for bbq videos. Never seen anyone use a electric mixer to shred the pork before, thats friggin kool, worked great!!! I hope to see alot more bbq`ing and shootin here! When i do my pulled pork, i let the temp stall, then wrap it, run the internal pork temp to 203 degrees. The 203 mark seems to be the magic number, for me anyways. Then i pull it out of the smoker, still wrapped, put it inside one of those coleman coolers to rest for about 1-1/2 to 2hrs. Juices flow back into the meat while resting. Fall apart tender.

Just found your new channel. 3 old time mechanics get together a couple times a week to watch you, Ivan and Ray. We have about 107 years total between us. I see you like to cover some recipe's and my family has a couple that are super winners. If you are interested in a bombastic bean and a fruit cake recipe that has been enhanced for 5 generations I would be glad to share them. I know, everybody hates fruitcake. Until they try this one. Even those that say they will never try any again , are the same ones that ask if we are going to make it every year. Go figure?? PS: all of us think Mrs. O is a GODDESS. You lucky bastard!

Looks great I like the old style of the hobo can from The Pit barrel where y'all gather around the fire with your paper bags of whiskey. But what I was a little dismayed with being sort of on a budget is when I saw the average lifespan of a pit barrel cooker is only three to five years I was surprised they don't last that long

If you take care of the Barrel, like keep as much of the Ash off the inside bottom, then the only thing your replacing is the Charcoal Basket and the flat Ash Pan

Jack Stack is good. If you can find it where you are I highly recommend Kansas city's own Gates BBQ sauce. It makes an awesome glaze on the ribs and chicken.
