[RECIPE IN THIS DESCRIPTION] Lupin Brownie Muffins.
Miracle Flour was provided to The Keto Kitchen free of charge by Wholesome Provisions
These are moist little chocolate-y muffins that pair BEAUTIFULLY with a nice big dollop of peanut butter! They may seem like they have too much sweetener, but this is the desired amount to counter any potential lupin bitterness.

INGREDIENTS:
- 50g (1/2 cup) Lupin Flour (I used Miracle Flour - wholesomeprovi...)
- 3 tbsp Coconut Flour
- 1/2 cup & 1/4 cup Sweetener (I used Erythritol)
- 50g (1/2 cup) Cocoa Powder (ALWAYS CHECK CARBS BEFORE BUYING)
- 2 tsp Baking Powder
- 3 Large Eggs
- 85g (3oz) Coconut Oil, melted & cooled
- 1 tsp Vanilla Extract
- 2 tbsp Almond Milk, unsweetened
- 120ml (1/2 cup) Cream
METHOD:
1. Preheat oven to 175c/350f. Prepare 11 muffin tins.
2. In a medium bowl, whisk together the eggs, coconut oil, vanilla extract, almond milk and cream.
3. In a large bowl, mix the lupin flour, baking powder, coconut flour, sweetener and cocoa powder together.
4. Add the egg mixture to the dry mixture and mix until well combined. Allow to sit for 5 minutes, to thicken a little bit.
5. Place batter in your prepared muffin tins, filling about 3/4 of the way up.
6. Bake for 20-25 minutes or until a toothpick inserted in the middles comes out “clean”. Leave to cool for 10. Enjoy!
