[RECIPE IN THIS DESCRIPTION] Lupin Brownie Muffins.
Miracle Flour was provided to The Keto Kitchen free of charge by Wholesome Provisions
These are moist little chocolate-y muffins that pair BEAUTIFULLY with a nice big dollop of peanut butter! They may seem like they have too much sweetener, but this is the desired amount to counter any potential lupin bitterness.
| The Recipe |
INGREDIENTS:
- 50g (1/2 cup) Lupin Flour (I used Miracle Flour - wholesomeprovi...)
- 3 tbsp Coconut Flour
- 1/2 cup & 1/4 cup Sweetener (I used Erythritol)
- 50g (1/2 cup) Cocoa Powder (ALWAYS CHECK CARBS BEFORE BUYING)
- 2 tsp Baking Powder
- 3 Large Eggs
- 85g (3oz) Coconut Oil, melted & cooled
- 1 tsp Vanilla Extract
- 2 tbsp Almond Milk, unsweetened
- 120ml (1/2 cup) Cream
METHOD:
1. Preheat oven to 175c/350f. Prepare 11 muffin tins.
2. In a medium bowl, whisk together the eggs, coconut oil, vanilla extract, almond milk and cream.
3. In a large bowl, mix the lupin flour, baking powder, coconut flour, sweetener and cocoa powder together.
4. Add the egg mixture to the dry mixture and mix until well combined. Allow to sit for 5 minutes, to thicken a little bit.
5. Place batter in your prepared muffin tins, filling about 3/4 of the way up.
6. Bake for 20-25 minutes or until a toothpick inserted in the middles comes out “clean”. Leave to cool for 10. Enjoy!

These look fantastic! I’m one of those unfortunate folks who learned the hard way that lupin flour doesn’t like me, so what suggestions would you have for a suitable replacement?

Almond flour 1:1 replacement works great! If it seems a bit too stodgy - a splash of cream or water helps!

Should do! It might change the moisture levels ever so slightly due to less fat but it shouldn't make too much of a difference

Can I replace the coconut flour with oat fiber, I think it has the same absorbing rate..

How much flour should i use if I only use coconut flour or almond flour

If you're just using almond flour, replace the lupin flour with 50g of almond flour. For just coconut flour, replace the lupin flour with about 25g of coconut flour (and the 3 tbsp)

Almond milk, coconut milk or cream, even water should work - it's worth mentioning though that if you use almond milk or water, the batter will be a little bit thinner :)
