I just bought the Lupina brand and so far I love it! I can't eat fat head dough because the almond flour bothers me too much. Last night I made fat head dough with lupine flour (minus the egg) for pizza and it was the best pizza I have made...not at all bitter and the flavor was amazing. I make chaffles to use as bread for sandwiches and added a tablespoon of lupine flour (I usually use pork rinds) and again...very good and no bitter taste that I can detect. I'm excited to what else I can use this for! No digestive upset at all and I'm so happy to have something other than almond flour!

About the macros on these: All three of the flours have 40g total carbs in a 100g serving Lupina and Miracle Flour have 36.7g of fiber in a 100g serving for 3.3g net carbs The Small Town Specialties brand has 24g of fiber in a 100g serving for 16g net carbs. There is 0g sugar and 0g added sugar. I'm perplexed as to how there can be such a difference in fiber. I contacted Small Town Specialties and they told me that their lupins are grown in northern California and I see that the Lupina is grown in Australia. Beyond that, I can find no explanation for the HUGE difference in fiber and net carbs between these brands. If anyone out there has a food science background and can tell me what else would go into the carb count if it's not sugar or fiber, that would be great.

I stopped using Miracle Flour because I could not make it taste good. Thanks for the review I believe we should stick to Lupina Flour then for taste and lower net carb count. I have often pondered, can we find the right ratios of flours; almond flour, Lupina flour, oat fiber flour, psyllium husk, guar gum (and maybe some vital wheat gluten) to make a perfect flour prepared for storage, so to have a great 1:1 substitute that we could have ready for recipes. Have you given this any thought?

I wonder if the fact that it's "sweet" lupin plays a part in the carbs. Who knows. I'll stick with Lupina. Thanks.

This might be a case where a postprandial test of glucose, comparing the Small Town Specialties and Lupina, might settle the huge carb difference question.

I poked around Amazon, reading some of the comments and questions by consumers of the Small Town Specialties Lupin Flour. The company does not answer the questions concerning why their product is higher in net carbs than their competitors. And they DO NOT claim that their nutritional information is in error on the bag. After watching your chauffle comparison video from a while back, I made a recipe for a larger batch. After watching your Tortilla video, I changed the chauffle recipe to switch out 1/4 of the almond flour for lupin flour. I like the effect, the chauffles are sturdier and don't shrivel up in the fridge. I've not noticed any after taste from Miracle Flour. But before watching your videos, I had only used that brand of lupin flour. Thank you!

Yay! Lupin flour. So, I use Lupina and the ingredients on the back read 100% Hulled Lupin Kernels. (Australian Sweet Lupin). I like the flour and the ground Lupin. So happy to see you using this.

Steve I love your podcasts and all your videos. I am a fan. I would like to see if you could do a video on lunch box ideas for a man, my husband, to be able to take to work with him. No one seems to think about work type packable KETO lunch items. My husband has been on keto now for about 3 weeks and almost lost 1 lb. per day. Fantastic. We now both watch you every day. Boy, Steve, you used a gold mine of eggs for this one! But I am glad you did this experiment. I have had a bag of that lupin flower in my cupboard for awhile, and because keto ingredients costs so darn much, I have been hesitant to ‘experiment’ using it. It’s just been sitting in my keto ingredient cupboard for a good month or more. I think I did try it in Victoria’s all purpose flour recipe, but I wasn’t too impressed with that experiment, so I just put it back into my stash. I really do appreciate your willingness to ‘put to the test’ videos. I trust your honesty. Now, I need to give it a try again, and also, now I know which brands to keep an eye out for. I can only find Lupina here in Canada at Amazon and and online it's always sold out. I usually use 25 percent. Like the texture in bread and waffles. Use 1/2 tbsp Swerve / per 2 cups alm flour and lupin to reduce bitter taste. Now looking for Lupin Semilina flour for pasta. Thx for video!!!!😁

Another nice video, thanks! I totally agree with using the Dash mini as a tester. I sell Keto baked goods, and it's my go-to way to test batters before making a whole batch of [whatever]. It's a life-hack tip, for sure! I have the Lupina flour in my pantry. Glad I didn't pick up the Miracle Flour.👍

Thanks for doing this comparison. When I first heard of lupin flour I bought 4 lbs of the Miracle Flour. I've barely put a dent in my supply. Now, I do wish to try the other types, and see which is best for baking with. I've learned that a little of any of these flour products go a long way since I'm the only keto person in my house. I love how you compare the items side by side giving honest opinions. That way if I ever try it then it helps narrow down the options. As far as lupin flour, I've heard of it and seen it used by people but never investigated it or ordered any. I'd be afraid I'd order it and only use it once, and my pantry is FULL of products like that lol. Like oat fiber, I ordered some, forgot what recipe I was wanting to try and it's now been sitting in there still sealed for a couple months now.

I bet you were going to make Diedre’s keto yeast bread. Keto King has a very similar recipe. It is the only recipe that uses oat fiber.

I've wanted to try making actual bread but I always get scared and intimidated for some reason lol. Scroggins Snapshots The keto Kong’s recipe and oven method are pretty difficult to mess up. You just have to make sure you knead the heck out of the dough. I have water kettle that makes heating up water easy and energy efficient for the rising. Amazing to watch the dough change every 15 minutes. Check it out.

@scrogginssnapshots I have a pantry full of that stuff, too. I have powdered butter that I bought probably a year ago to make @ketoconnect imitation stoka granola bars. The container is HUGE lol, and it just sits there with the other flours and keto special ingredients that I've barely touched. 😆

I'm on a quest for a good hotdog bun using lupin flour, so can't wait. I made the bread from I don't sugar coat (KZbin) had good success with that, so I was going to use that recipe and make buns. Now, I'll just use yours. Her bread recipe is very good. Has a good mouth feel. Texture is good, smell is great.

Hello Steve, After your review, I ordered the Lupina Lupin Flour from Amazon. (I already had the Magic Lupin Flour and experienced the bitter after taste you did) I made a Banana Nut Bread (no bananas) with the Lupina Lupin Flour and it was much improved (zero bitterness)from the Banana Nut Bread made with the Magic Lupin Flour. As you pointed out, sweet white lupin flour is the best. I still have some tweaking to do with the Banana Nut Bread recipe, but at least this time I didn't dread eating it due to the bitter after taste. I, like you, don't like to discard my mistakes. I still have some of the Magic Lupin Flour left, and there were a couple of recipes that the bitter after taste wasn't as prominent (mug bread, chaffel) so I'll use it in those recipes to finish it up. From here on out I will purchase the Lupina brand. I like to use the lupin flour as the carbs are lower and every carb counts. Thank you again for the review.

I used the Miracle Flour in my tortilla recipe and the "pan head" crackers and didn't get a bitter taste (likely because it is used in such a small quantity).

Use up your Magic Lupin flour by only 1/4 of the recipe with Lupin and then another type Almond or Coconut flour. It takes away bitterness with another flour added.

Great review. I agree with your assessment. I tried the Miracle Flour first and then the Lupina. I definitely prefer the Lupina. I use it to make chips and pizza crust (I got the recipe from keto for real life people on YT). I picked up some pander cheese so I will try the pan head crackers. Also I'm loving the Promix. I put some in some fat bombs. Great. Thanks for all you do.

I have a bag of the Small Town Specialties Sweet White Lupin Flour that I'm not going to use. Purchased it back when I was looking for the best tasting lupin flour. I don't know about anyone else, but almost every recipe calls for almond flour and personally I'm getting sick of the smell and taste of it. This video was very helpful in giving me the alternative I was looking for, thanks Steve.

Ok Steve, you've earned it. I'm joining your channel. So many darned challenges with the low-carb cooking/baking. I've only used Miracle flour and while its behavior is good, and texture can be amazing, the bitterness is a real obstacle. I'll be trying the other brands....quickly, before you make them sell out! Interestingly, I've also purchased the Carrington Farms ground lupin MEAL at Costco and it is absolutely not bitter cooked straight up with nothing but water. My whole family will eat it as a sub for mashed potatoes without complaint (without raves as well but I haven't found the seasoning secret yet...probably involves bacon). None of us can detect any bitterness in it. Unfortunately, I don't have a grain mill to try grinding it a little finer to try baking with it. Thanks again for all you do.

I bought the Lupina when you did your Tortillas a few weeks ago. It's fine for my needs. I just use it in Chaffles and have been using Manchego Cheese in that particular variety. The problem I see with Lupin is the Protein macro is way high vs. Almond Flour is more fatty. Good info though, thanks Steve!

Thank you for the comparison, I have looked at so many reviews on Amazon for the different types and brands of lupin flours, I confused myself. LOL Now I know what to purchase. I did buy Carrington Farms Ground Lupin Bean to make a side dish with and I love it. It's great as a grits, couscous or polenta substitute. (nutrition; 1/3 cup 130 calories, 16g carb, 15g fiber, 1g net carb) It's supposed to be good for breading on chicken or fish, I just haven't tried that yet. Keep the great videos coming.

@@Edu_Kate I used a recipe from I Don't Sugar Coat, but have made it a little plainer and it was good too. Recipe: 1/3 cup Ground Lupin 2/3 cup (158g) Water 1/3 cup (37g) Cheese, shredded 1/4 cup (25g) Scallions 1 slice (12g) Bacon, cooked and chopped 1 tbsp (14g) Butter Salt Pepper _Cook on low heat stirring occasionally for about an hour. I had to add a little more water.

So glad you did that test Steve; thanks! I got started experimenting with Lupina and followed a recipe I found online for sandwich bread...it turned out a gluey mess that tasted like peanuts were in it (lupin bean is a legume in the same family as peanuts, so not to be eaten by those with peanut allergies). The failure of my bread is likely all my fault since I forgot how critical altitude adjustments can be for breads...until I saw it rise up and fall down. However, that was too much lupin flour for my taste, so I'm going to substitute no more than 25% in my next trial, using one of the recipes from Better Breads. Hopefully I'll remember to do the altitude adjustments this time! I did find that throwing a tablespoon of Lupina in my chicken-crust bread gave it more texture and toned down the chicken flavor a bit.

I love ❤️ your voice. Thanks for the informative video. I am not a fan of almond flour for savory things. I have a coconut flour pizza dough recipe l use it’s just not sturdy enough. I am going to order a bag of Small Town Specialties and experiment with it

Good one Steve. Up here I use Ecoideas organic lupin flour. It’s done well in tortillas and chaffles as well as pizza dough and pitas. I’ll have to haul in more brands to garner any differences. As you’ve pointed out one or another may be better for certain things.

I actually ordered some keto dry pasta from gnomgnom and I have yet to taste it, but I noticed that's what they used for the noodles (they're like tiny corkscrew pasta and they look and feel just like pasta). I haven't cooked them and eaten them yet, but this video gives me a heads up as to what to expect!! 😁

Thanks for this! I loved nut & seed meals -- until about a month after I started eating them, when horrible gut pain began to accompany any ingestion of them at all. (I can eat nuts and seeds whole, so go figure!) All I've had is coconut flour and protein powder since. Lupin opens the horizon just a bit. Anything like that is good!

… according to Dr. Eric Berg , lupin flour does contain lectins and lytic acid, so some people may have a problem with it in digestion …

Thank you for your review it is so helpful! I am going to check out more of your Lupin flour recipes well, at least I hope you have more. I just received my Lupin Flour in the mail. Guess what it is the Small Town Specialties from California and I am anxious to get to the kitchen. I have been thinking about using it to make refried beans. That was a good showdown. I was happy Lupina was one of your favorites. When I made your tortilla recipe, which is the BEST, the amazon link took me to Lupina. I think I’ll wait till the hot dog bun recipe comes to see if I need the other brand for that. Hot dogs really need a vessel!🌭

You are my go to guy for recipes now. I love your comparison videos especially this one because I too have had issues with lupin flour tasting a bit like...dirt. Joe Duff has some wonderful recipes as well but he measures everything with a scale. I can't seem to get into that. I am definitely a 1/2 teaspoon of this a 1/2 teaspoon of that kind of girl.

This is great, I'll look into the Small Town Specialties (STS) flour. I have the Lupina and it's worked out ok for your tortilla, but I'm want to try STS now. :-) My biggest challenge is STORING all of these different flours, sweeteners and misc, so far totaling 17. I don't have a lot of space and I like having the variety on hand, so figuring out how to affordably store everything, while making it easily accessible is a quest in itself.

I always store Lupin flour in the freezer and any nut flour or flax meal so it does not go rancid. I do have a big freezer out in garage. It helps free up space on the baking shelf.

My lupin flour is by EcoIdeas (purchased on Amazon Canada) it says on the back that it’s sweet white European lupin flour. They say not to confuse “sweet” with sugary, rather, it’s called a sweet variety as opposed to the more common bitter varieties. However there is no note of it being sweet lupin flour on the front of the package so I just want to advise that EcoIdeas also is “sweet white “ and there is a difference.

Miracle flour uncooked tastes like just what it is ground raw beans. I have a bag that I purchased not long ago and will use it but I will be changing brands just because of that raw bean bite.

I’ve made bread, bagels and pasta using lupina flour mixed with oat fiber and vital wheat gluten. Thanks for testing out chaffles using all the different flours!

Would you be amenable to sharing ratios? We don't have gluten issues so I do use VWG. I also have brand preferences...I find Anthony's oat fiber too "earthy". I get my oat fiber at the health food store...it's snow white and cleaner tasting.

Thank you for this! I just tried the Lupina for the first time last week for some keto crackers and I really liked it. But I understand why you use just a little bit as the flavor can overtake a recipe if using too much. To me it had the flavor of raw dried peas or legumes, like the kind you use to make split pea soup. I hope to do more experimentation with it. Have yet to try your tortilla recipe, but that is next on my list!

Hey Steve, Some what new to your channel but love it.❤😜 You do a great job. Don't be so hard on yourself and please don't take down any of the old videos unless you totally re do them. You may see all the flaws but it keeps us all aware of the growth process it takes to do the great job you do now and what it will take if any of us start to do our own channels. Not looking to give you competition but video channels on any topic is the wave of the future so we all need to learn and grow. Regarding the recent video you did on the Aviate Lupini flakes. One- I bought some and used the disc code - thanks for that. Two- I made a tuna pasta type salad using them as the pasta...finally get to have pasta like salads again...yaaaaa I have lost over a 120 lbs by a combo of Carnivore & Keto so have to stay away from normal pastas. These Lupini flakes are cheaper than Miracle Noodles and more common in size to elbow macaroni which is a bonus. I just got some Tahini at the store so I can finally make your hummus recipe which is why I got them in the first place, but I was so excited to try them I came up with the tuna pasta type salad. I also used them with pasta sauce and parmesan cheese and they did good. No al dente ability to them but that is ok with all the fiber, protein and not even a whole gram of carbs...winner winner turkey dinner...LOL The BIG reason for this run on getting started today is to share an update about Aviate that I just came across. I recall the video where you mentioned they were a small start up, had a dry spell kick them in the gut and then shortly after your Hummus video came out and they got a surge in business. Well today I went on Amazon to get more flakes and they don't have any and are not sure if or when they will get more. WOW!! I hope and pray this is a good thing for Aviate. Also hope your influence was a big part of that surge in business. Did not know if you wanted to touch base with them and let them know especially if any of your other subscribes have related info like this. Could be time to scale their business. If you are not board of my running on I would like to share my chaffle journey which your videos have played a part. To lose as much weight as I have (I have plenty more to lose as well) I researched so much I knew the carnivore path would be a key factor in my successful journey. I had to stop the on again and off again keto wagon. In several months on carnivore and then several more keto months, I shrunk my cancer down more than half, got off a bunch of meds and got most all my labs into the normal range. The problem was I have achieved all my goals with those results in addition to no more inflammation causing life limiting issues, majorly less constant pain in muscles and joints, loss of all skin conditions that I now know were caused by grains. I am a whole new person able to live a whole new lifestyle and so board with what I was eating I was falling off the success wagon. Additionally, living a more normal life was also bringing back emotional triggers that had caused me to eat my emotions for the past 30 or so years. So emotional issues aside. I knew getting to add more flavorful foods that were still keto quality was a must for the rest of my life. I am not going back to the debilitating life I had just less than a year ago and feeding the cancer all the carbs it loves so it could kill me faster. All the complicated recipes I had tried in the last decade when I was on again and off again with keto were not sustainable. Back then the pain to cook anything was already a limiting factor and the more time consuming a recipe was the more likely I was to not have enough energy to do any clean up after and the muscle and joint pain after preparing those meals kept me immobile for the remainder of the day. CHAFFLES are such an easy and versatile way to go.✨ Savory or sweet I can cover so many flavors to keep the boredom at bay. Your videos were a big motivator to try and experiment with chaffles. They were easy, mostly carnivore and sustainable. I made a variety of them using two non stick fry pans till I knew I was hooked and then invested in a waffle maker. Then invested in the Quest Cinnamon Crush powder along with many other seasonings for other recipe ideas I tried. So thanks again for the creativity and inspiration you exude with your videos that are so helpful in addition to being entertaining.🎁😘 Key point: if doing regular chaffles adding a teaspoon of psyllium husk powder in each batch is vital. When I eat the chaffles I can't tell it is in there but the benefits are smooth sailing. Thanks again Steve. Peace and Joy😊, Char

Good video. I've been making lupin yeast bread. Had a great aroma but not so much flavor. Whaaat! I used Miracle flour! Going to switch to Lupini brand since we like a heartier bread. Maybe bitter aftertaste will be a thing of the past!

I didn't realize there were more than one kind of Lupin flour! I had purchased Lupina also and just made my first "rye" bread chaffle with it: I tossed in a ton of caraway seeds, decent amount of turmeric (cuz why not), light on onion powder, baking powder to egg and mozzarella. Couldn't taste the Lupina at all really. Made for yummy "bread" for cucumber, cream cheese and dill sandwiches.

Steve, I am wondering if you will try to perfect the noodle/pasta recipe, I have watched videos till my eyes are crossed LOL I am wanting one that you can use a stand mixer with roller attachments, I have found a couple and reading the comments, not sure, I know if you made one it would be fantastic. I bought a bag of Lupin flour but not sure that is the way to go, decisions decisions decisions.......

Some time back (so I don't remember who), I watched a guy make bread loaves testing which amount of lupin flour tasted best. Full strength, half and half and 25%. I think he found a happy medium using less and almond flour for the rest.
