How can you exactly generated light with a certain wavelength? What happens if the foton has just just a bit more energy? Will the electron still jumper and where is the tiny diff in required energy going?

Think of you climbing stairs; you have a lot of stored energy; your body just uses what it needs to go up one stair and uses some of the excess energy to release as heat or other energy. Same thing with electrons. When you go down stairs, you release energy and only the amount needed to go down the stairs; same thing with electrons. Why no read the textbook; it will help you with these question :D

can these wavelengths be produced by any other way ? ie if we observe 122nm wavelength are we always 100% sure that this is hydrogen atom, it cannot be anything else?

Yes, in the lab these lines are measured very precisely. Each element on the periodic table has its own characteristic wavelength lines and no two elements on the periodic table share the same set of wavelengths. Good question!
